The Peppermint KInj?
This potentate was born .n Oneida
county New York on Juno 10 1810
says The Farm and Household and tils
namo which has for ninny years been
kept standing in typo In tho chief mar-
kot journals of tha world is Hiram G.
Hotclikts.1. Now 75 yours old ho is ro-
bust ami plump hustling with activity
umong his puppcrmint bottles during
tho nuxsou of oiJ production anil in ev-
ery way master of his speciality. When
ho was 7 years old his parents roinovod
from OiWiila county to Ontario county
which mljoiiis Wayne ami settled in
tho town Phelps. At tho ago of IS
ho started a small country s'.orn to
which later ho nttaeliod a llouring-mill
thereby becomlm; a general furnisher
ot food material'. About 1837. ten to
twelve years after ltui uelt had put a
practical appraisement on tho valuo of
the now famous Wavno county weed
Mr. Ilotchkis-t bcgiin to buy pepper-
mint oil of tho fanners about Lynns
who took It lo him as tho most enter-
prisin;! merchant they knew. I lo also
got into tho business of buying the raw
moter.al as it would bo oil'ored lo him
in connection with wheat taken to his
mill and d. stilling tho o.l himself. Ha
presently saw a future for Wayne
county peppermint and disposing of
his business in Phelps removed iu
1841 to Lyons hero gradually to assert
dominion" over tho peppermint-oil busi-
ness of tho world. There aro two or
three other dealers in tho county but
tho. bulk of tho crop goes to market
through the hands of Mr. Holchkiss.
The mint is raised eh icily in tho
towns of Huron iSodus Calen Marion
Arcadia Williamson Lyons and Rose.
Tho loam soil of tho Hat lauds of these
towns is naturally adapt oil to it but tho
richness of the plant in oil varies so
greatly that producers can not mix
their crops for distilling taking a pro
rata share of the oil ns dairymen mix
thoir milk in a common pool at tho
cheeso factory and tako a pro rata
share of the cheese. Tho mint acreago
of tho county this year i.s estimated to
be about four thousand acres and this
area is said to bo only about one-half
what it would have been if tho season
had been favorable. Mr. Hotohkiss
estimates the total product of oil this
year to bo worth Sliitt.o; K). In a fairly
good season it rises much beyond this
amount. Tho crop is now of course
all in and much of it has hoen sent on
its way to tho candy factories the
bakeries and tho aching stomachs of
the world.
Peppermint long ago ceased to bo
looked upon as a weed in these parts.
It is a legitimate agricultural product
planted and at tended to us systematical-
ly as a crop of wheat or potatoes. Tho
oil is sent to market from Lyons in
wholesale quantities but a small part
of each year's product is put up in
phials 4'to give away to my colicky
friends" as Mr. llotchkiss says. The
bottles for commerce contain twenty
ounces and eighteen bottles are packed
in a case the current worth of a caso
at first baud being $90. Mint farmers
who during tbo season of shipping and
packing frequent Mr. llotchkiss' fac-
tory say that pepporniint-raising is
considerably uaoru prolitablo than
wheat raising and is a surer crop the
average of seasons and tho market
considered than almost anything else
tbey could produce on their available
mint soil.
