Christmas Dinners
"
It's time to be planning the Christ-
mas dinner.
If a homemaker hasn't already
made her fruit cake, that should be
first on the list, according to Haz-
el Phipps, specialist in food prepara-
tion for the A. and M. College Exten- j
sion Service. Next, families who ;
don't raise their own turkeys will
need to consider whether they'll buy
one, and if so, what size it will be.
Ordinarily, the homemaker should
allow three-fourths to one pound of
turkey per person, so a 12 pound
turgey wuld serve 12 to 16 people.
No matter what size is selected,
the turkey should be cooked at a low
temperature, foT that keeps the meat
tender, the specialist explains. From
300 to 325 degrees F. is usually best,
with 275 degrees F. recommended for
turkeys weighing over 14 pounds.
For a dinner that's different Miss
Phippe suggests substituting cran-
berry salad f,or the traditional cran-
berry sauce. She gives these direc-
tions: "Run raw cranberries through
a food choppr and combine with some
other fruit. For example cranberries
combine well with oranges, pineapple
or apple. If you like a tart salad you ! cans, add some to the salad."

with salad dressing, but if you pre-
fer, it may be sweetened. If you are

paring fruit cake or roasted turkey

to guard and conserve today's unused Gas reserves for use tomorrow ... to
continue a never-ending search for new Gas«producmg areas . • • to drill
deeper wells and tap new Gas reservoirs.
Our lirst job is to provide Dependable Natural Gas Service for Gulf South

that the children of today may have the enjoyment and benefit of Natural Gas
Service ... so that Gulf South factories may continue to build and expand
