mense frying vats, that can cook
up several hundred in less time
than you can get your materials
ready. At his last inventory, Mr.
Anderson had 3,800 pounds of
shortening on hand. He buys
flour by the 0,000 pound lots; his
fruits, which are the most popu-
lar brand in demand today, he
buys in car load lots, to be used
in his fried pies which run a close
second in popularity to the donut.
And in addition to these he makes
the donut twist, and jelly sticks.
The four delicious fruits used
in his pies are cherry, apricot,
pineapple, and apple.
Mr. Anderson's Dixie Cream
donuts and pies can always be
found at your favorite grocer's,
but in the event you find your
grocery store closed, you can al-
ways find the Dixie Cream Donut
Shop open from noon on all night,
the owner says.
Started two years ago in March
in it very modest way, the Dixie
Cream Donut Shop soon outgrew
the two small rooms on South
Rusk,' which was its first home,
and was moved into the spacious
building where it is now located.
Built on friendliness and merit
the hop now triples the amount
of business done in those first
few months. After moving to his
present location, Mr. Anderson
bought out a bakery shop in Par-
is, and with this added equipment
moved into his Denison Dixie
Cream Shop, he has double the
working equipment of most shops,
and can turn out as many as 3,000
dozen donuts in a day.
A short trip through his clean
and efficient establishment re-
vealed his regular procedure from
the first setting of the dough,
through its first risinju. the rolling
and cutting process a 1 the proof
box where it must j V a second

for frying. And from the proof
box into the two large vats of
hot shortening, and then into the
glazing machine. From this sweet
glaze they are lifted to the drying
racks and subsequently into the
boxes and onto the delivery trucks
This fast moving assembly line
is well tended by expert and ef-
ficient employees, who along with
his drivers number fifteen in the
Dixie Cream organization.
