Wintertime seem especially appropriate for a rich chocolate layer
cake—with snow-white coconut-flavored vanilla pudding as a contrasting
filling. The sugar topping, which gives the effect of powdered snow, fits
right into the winter picture—all contributing to a cake that tastes as
delicious as it looks.

Chocolate Coconut Cream Cake
2 cups sifted cake flour
l\i teaspoons soda
% teaspoon salt
',■! cup shortening
1'/^ cups granulated sugar, or 1%
cups firmly packed brown
sugar
2 eggs, unbeaten
3 squares unsweetened chocolate,
melted
♦Buttermilk or sour milk (see
below for amount)
1 teaspoon vanilla
♦With butter, margarine, or lard. \
use 1 cup buttermilk. With veg-1
etable or any other shortening, use
1 cup plus 2 tablespoons buttermilk.
Sift flour once, measure, add soda
and salt, and sift together three
times. Cream shortening, add sugar
gradually, and cream together until

time, beating well after, each. Add
chocolate and blend. Add flour, al-
ternately with buttermilk, a small
amount at a time, beating after
each addition until smooth. Add
vanilla. Turn into two deep 9-incli
layer pans which have been lined
on bottoms with paper, then greased.
Bake in moderate oven (350° P.) 30
minutes, or until done. When cool,
split layers in half and spread with
vanilla coconut filling.
For design on top of cake, cut a
piece of paper into a scalloped pat-
tern and place on the cake. Then
sprinkle on confectioners' sugar.
Carefully remove pattern.
Vanilla Coconut Filling. Prepare 2
packages vanilla pudding powder
as directed on package, reducing
milk to IV2 cups for each package.
Chill. Fold % to 1 cup cut shredded
coconut into chilled pudding and
spread between split cake layers.

Optometrist Opens
Farmersville Office
Dr. Edward Cope, Jr., son of
Mr. and Mrs. Ed Cope of McKinney,
opened an optometric office in
Farmersville on January 2. The
office is located across the street
from the Post Office and will be
open from 9 a. m. to 5:30 p. m.
week days except on Thursdays
when the hours will be 9 a. m. to
12:30 p. m.
Dr. Cope attended Texas Tech-
nological College for three years
prior to entering service in World
War II. He was discharged from
the Army with the rank of 1st
Lieutenant in the Medical Admin-
istrative Corps after serving for
four years. He is a graduate of
Northern Illinois College of Optom-
etry.
The office that Dr. Cope has
established in Farmersville is
equipped with the most modern
optometric equipment and new
furnishings. Modern frames and
new designs will be available
there for all members of the
family.
Dr. Cope has extended an in-
vitation to all people of Wylie
to visit him in his new offices at
any time that optometric services
are needed.
NO DRAFT FOR HIM
New York, — Army officers were
recently informed why 23-year-old
George L. Gonzales could not 're-
port for his pre-induction examin-
ation. Gonzales was killed in Korea
last September 5th. He had enlist-
ed in August, 1949.
