FBIED OYSTER SUWWICH.
f Drain large oysters until dry. Sea-
Ison with salt and pepper. Beat an egg
slightly" and add two tablespoons of
milk. Dip oysters in flour then in
egg mixture and in cracker-crumbs
- . Fry in deep fat.
Butter one-fourth inch slices of
bread. Lay fried oysters on buttered
slices add a few drops of lemon
3uice and bits of minced parsley. Cov-
er with a second slice. Garnish with
thin slices of dill pickles.
. OYSTER SCRAMBLE.
Three eggs.
One-half cup milk.
Two tablespoons butter.
One cup oysters.
Melt the bn'tter in the top of the
double boiler Beat the eggs until

paprika and turn the mixture into the
melel -butter. Cook until mixture be
gins to thicken. Parboil the oysters
cut them in. 'fine nieces and have them

ing stirring occasionally until mix-
tare is thick. Serve at once on strips

One' teaspoon lemon-juice.

Add the milk and stir until the sauce
boils. Place; over hot wntti. Add the
oysters chopped pimientQ and salt
Heat thoroughly. Beat thfe egg yolks'
cream' the remaining butter combine
and add Semen-juice onion-juice and
paprika. Stir these into the hot mix-
tures. Continue stirring 'until the egg
5s tooked. Serve on toast in patty
