<ouveution, by resolution duly presented
and adopted, the standard ol weights lor
bread sold by the loal, to wit, 10 ounces per
one pound. 1
"The Governor of Texas subsequently iv
sued and filed his proclamation regarding
this matter, wuerein the standard or
weights for a loal of bread was designated,
declared and published as the law requires,
at ]0 0 Oil CM per one DOUUd.
"The Texas Association of Baking In-
dustry has been advised, through the pub
lie prints and otherwise, that an effort is
being made ou the part of certain bakers
to have the fixed and declared standard
changed and modified bjr reducing the
wiUii of the loaf, or to hare th« itaudard
so fixed by you, entirely or partly abro
gated.
"As to this effort ou the part of certain
I>akera we wish to enter a most vigorous
aud solemn protest.
"1. The bakers' association desires and
wishes the present standard to be main-
tained without alteration, as it not only
losters and prompts fair dealings with the
public, but that it forces and compels
those who are not disposed to deal fairly
with the public to do so even agaiust their
inteuts and desires
"2. It gives to the public full and com-
plete knowledge that every loaf of bread
sold in Texas contains the standard weight
i»f 16 ounces per pound, and that those who
neek to real unfairly, by short weights,
an be legally prosecuted for deception and
fraud.
"3. If the price of flour or other com-
modities going to make up a loaf of bread
have Increased In value since the establish
rnent of the present standard, then the
remedy Is to Increase the price per loaf
mid not reduce the size of the loaf, and
thereby deceive the buyer.
"4. The prices should be based on the
standard weight fixed, and not on the
changing of the standard weight, which
would result In misleading the public.
That the bakers association of
Texas, comprising about «r»75 bakers. In an-
nual convention during the current year,
adopted a resolution fixing the present
standard of weights; that said convention
had 250 delegates present from all parts 01'
Texas, who voted In good faith for th<»
present standard; that said association
supplies between HO and 00 per cent of the
bread consumed by the public; that this
regulation which is the present standard
should not be altered over the protest of
this association.
"(I. That if the present standard Is
• hanged it will stimulate aud develop un-
fair competition, whereby the public will
be at the avariclotiR mercy of certain bak-
ers, who by reducing the weight can and
will sell more loaves of bread for a fixed
sum than can be sold by members of this
association who desire to deal fairly, and
sell to the public id ounces in every loaf
of bread leaving their ovens.
"7. That for tue past 'JO years this asso-
'iation hns been working and striving to

bers, believing that a fixed and permanent
standard of weights would attain that end
