new record for anti-tuberculosis
Christmas Seal Sales may be
reached this year if early reports
from over the State are a true
indication, H. A. Wroe, veteran
banker, reported to state head-
quarters here this week.
Thousands of volunteer work-
ers augmetned by support of the
Texas press, radio, and official-
dom have not only publicized the
Christmas Seal campaign but
have stressed the lowering death
rate, the clinic and child health
work of the Texas Tuberculosis
Association has helped achieve to
create wider interest in the press
ing problem of combatting tu-
berculosis in Texas, Wroe stated.
President Roosevelt's endorse-
ment of the anti-tuberculosis
drive and Christmas Seal Sale
was echoed in Texas by a procla-
mation by Gov. W. Lee O'Daniel

Beef Upside Down Pie
1 '/j e. lifted all-purpose flour
8 tap. baking powder
1 tap. paprika
1 tap. celery salt
M tap. pepper
1 tap. aalt
6 tbsp. shortening
% e. milk
14 e. sliced, peeled onion
1 10%-oc. can condensed tomato soup
% lb. ground chuck beef
8ift first five lngred'"nt» with % tap. of salt. Cut In 8 tbsp. of
shortening, until of consineucy of coarse corn meal. Add milk. Meanwhile
cook onion tender In 2 tbsp. of shortening in a skillet. Add soup, Va tap.
■alt, and beef. Heat; then pour into 8%" z 2* baking dish. Spread dough
on top; bale* Id vary hot ovsn of 476* F. for 20 min. Serve upside down.

1 tbsp. butter or margarine
1 aliced, peeled, small onion
1 No. 2 can tomatoea (2V£ e.)
1 12-o*. can whole-grain corn (1% e.)
1 10V&-OS. can condensed bouillon
2 tap. granulated sugar
Melt the butter In • saucepan. Then add the onion, and sautt it
until tender but not brown. Next add the tomatoes, corn, undiluted bouillon,
sugar, aalt, and pepper, and simmer 10 min. Add baking soda, milk, and
sliced stuffed olivea; heat, and serve In warm soup bowls. Serves 6.
Serve with Toasted Whole-Wheat Bread and Butter, Celery, Gingerbread
Layer Cake with Applasauce Filling, Coffee or Tea.
Spinach and Eggs Leo
8 e. hot. cooked spinach
1 tap. salt
Speck pepper
1 tbsp. butter or msrgarlne
8 tap. chili sauce
4 eggs
% e. grated cheese
Chop the hot. well-drained spinach; then add the aalt, pepper, and
butter. Combine thoroughly; then place in a greased 8%" i 2* heatproof
utility dish. Using s spoon, make 4 indentations in the aplnaeh. reaching
to bottom of dish, each large enough to hold an agg. Place 2 tin. of the
chili aauce In each indentation; then break an egg Into caeh. Sprinkle
with a little additional salt and pepper and the cheese. Bake in moderately
hot oven of 871* for 20 to 22 min. Serves 4.
Serve with Bread and Butter, Coffee or Tea and Crackers and Cheese
with Pineapple Juice.
Cheese and Pea Fondue
I slicee white bread
Vi lb. processed American cheese,
thinly siloed
• e. Milk
1 tbep. butter or margarine
I <no. separated
Vt tsp. salt
>/j up. prepared mustard
1 tbsp. minced onion
% tap. paprika
Speck pepper
2 e. drained, canned pea*
Arrange bread, with crusts removed, in a greased baking dish, 12* x
8" x 1 Vj". Cover with cheese, en Id milk; add butter; cool. Add to slightly
beaten <n yolks, with all remaining ingredients except egg whites. Beat
era whites atiff; then fold into yolk mixture. Pour over bread; bake in rncxl-
erato uvea of 860° F. for 46 min., or until firm. Serves t.
