Take good tablcspoonful of butter,
one cup of sour milk, halt a cup of
sugar, and two-thirds of a cup o< mo-
lasses. To them add half a toaspooaful
of ciannamon, half a teaspoopful of
soda, dissolved iu ajlittle water, and a
scant tablespoonful of ginger; stir
these together and sift flour enough
in to make a moderate stiff batter.
Bake in a deep cake tin, and cut in
thin slices. Haifa cup of stoned and
chopped raisins is an excellent addi-
tion.

Veal Cutlet.—Veal requires more
cooking than any meat except pork.
It is too dry to broil, and is best fried
and served with a nice gravy. It
should be fried slowly, and if there is
not enough of its own fat to fry it a
little fresh suet will answer. When
it is done remove the meat to a plat-
ter and pour some milk into the pan,
adding a small piece of butter it you
think it will not be rich enough.
Moisten sonic flour with a little milk,
and stir it into the milk in the pan.
The gravv will be colored a beautiful
brown from the juices of the meat
that have dried on the pan, if it is
well stired. Beat up an egg and stir
it into the gravy just before taking it
up, ana then pour it around ti e meat.
