BHter Homes Exposition and this

If there are any in Temple who
hare not contrived to attend at lea*
one of the classes, they should exert
extraordinary efforts to be on hand
today- The marvelous success achieved
by the school is the subject for dls-
c»*sion among hundreds of Temple
women And an *11 absorbing theme.
They are united in the opinion that
nothing' like it has ever before been
available to the ladies of this city and
nearby sectJojis. Interest in the
school has spread to nearby towns and
fliiite a number of Belton attendants
have bwn noted in the past few days.
Yesterday's attendance was a top
noteher, the church basement being
filled to overflowing with industrious
women eager and anxious to learn all
that is new and valuable in the culin-
ary art. Without exception the ladies
speak enthusiastically of Mrs. Cha*e
and her practical, common sense
methods .exemplification of which has
spread much useful knowledge among
them.
The Musical Programs.

It is felt that if the sterner sex
realized what Is taking place at the
school and will take a glimpse at the
swarms of wholesome looking, intent-
ly interested women congregated
there and open their ears to a few of
the things that transpire there, they
will depart with iui entirely different
point of view, confident that they have
added to their store of knowledge. It
will likewise stimulate them to a
course of co-operation with the lady
of the house in placing in practical
use many of the things which will
later prove of domestic value.

Reversing the order of the program
yesterday, Mrs. Chase reserved her
thirty minute lecture on the use of
electrical appliances in the home for
the last.
"Now as to the cake making," the
lecturer begun as the rustling of lurn-
inK leaves in note books replete with
all week recipes from the Chase re-
pertoire, emphasized the interest every
woman fit In this all absorbing sub-
ject.
"Cake making is undoubtedly the
j most popular branch of cookery—
about the first thing our daughters
want to learn to make—arid it is
usually angel food cake that their
first thought centers on."

Little ripples of amusement flash-
in? through the company indicated
the memories enlivened by the sly lit-
tle thrust. Visions of experiments
tried out on the most difficult recipes
in the whole vista uf cakes, evoked
remembrances of dwnally woeful
tallures in that line.
"Cakes, cookies and the like are
in the same class with breadstuffs,"
continued the demonstrator, "that is,
they are In the carbohydrate class.
We have the two types of cake, those
made with aid of fats and those made
without. The pound cake illustrates
the first ana the sponge, sunshine and
angel variety the latter. Cake is nour-
ishing and easily digested if not too
heavily coated with rich icings. Good
cake is not difficult to make if a few
fundamental rules are practiced.
Have Everything Rendy.
"Have everything in readiness be-
fore you start your mix, for It may-
lie spoiled it you are obliged to pause
tc prepare an ingredient. Have the
pans ready and the oven heated to the
proper temperature. Sift flour, bak-
ing pewder and spices three or four

temperature for a cake containing
butter or other fat should be slightly
hotter than for cakes made without,

Mrs. Chase went to work in dead
wrnest and within an Incredibly short
time had the cake ready to go in the
oven. The proper manner in whtefe

tion accompanied with explanatory
and illuminating remarks making
plain and easily understood the va-
rious processes by which the results
are succeesfully arrived at
"I don't see how she does It," one
little woman was heard to remark.
"How she can do all that work and
talk about It as she does It, gets
me." The secret of course la long
practice, thorough familiarity with the
subject and personal adaptability,
couple^, with love for the work.
When the cooking program for the
day had been concluded and Ibe lec-
turer had stopped to chat a few min-
utes with inquiring ladles who sought
advice and suggestions on a variety
of closely related domestic topics, she
launched upon her lecture treating of
the use of electrical appliances in the
home. The Texas Power and Light
company has a most comprehensive
und complete exhibit of this nature
gracing Its booth and taking up the
various appliances one by one, Mrs.
Chase carefully explained their merits
and advantages, the method of reg-
ulation to secure the proper results,
their various and multiplied uses and
the conveniences originating there-
from, showing how much of the
drudgery of household work is eli-
minated as a result of their Installa-
tion in the home, the saving in
strength and health of the housewife
fortunate enough to enjoy their own-
ership.
