1910 to 3,180 in 1962, and sources
of some of the calories have
changed, too. The percentage
of calories from starches and
sugars has decreased, and ha?
increased from fat.
For example, carbohydrate
supplied 57 percent of the total
calories in 1910, but in 1962 they
supplied only 47 percent. The
percentage of calorics supplied
by fat increased from 32 per-
cent in 1910 to 41 percent in
1962. but calories supplied by
protein have remained 11 and
12 percent.
The average consumer has
both positive and negative
points of view when it comes
to any particular food, Beef
steak may appear to be a highly
flavored food to some, rich in
protein, and other essential nu-
trients --or it may represent
a source of saturated fat.
