WATERMELON A
TEXAS FAVORITE
It's watermelon time and
that means good refreshing eat-
ing on a hot summer day.
Watermelon, a great treat
for dieters, is low in calories,
and it is a good source of po-
tassium and phosphorus-two
minerals essential in good nu-
trition. Watermelons also supp-
ly some of the B-vitamins, vit-
amin C and vitamin A.
To serve watermelon, cut into
into slices or wedges, or into
balls and cubes for variety.Or,
create a refreshing salad for
summer months by combining
tire cool taste of watermelon,
cantalope and honey dew melon
balls. Add a few blueberries
and peaches for an extra taste
tingler.
Another watermelon treat
that will surprise your family
is watermelon rind pickles
These are the ingredients:
4 quarts prepared watermelon
rind, 1 cup salt, 2 quarts cold
water, 2 tablespoons whole
cloves, 3 sticks cinnamon, 2
pieces gingerroots, 1 lemon,
8 cups sugar, 1 quart white
vinegar, 1 quart water.
Trim dark skin and pink
flesh from thick watermelon
rind; cut into one pieces or
as desired . Dissolve lime or
salt in 2 quarts water; pour
over rind. If needed, add more
water to cover rind . Let stand
2 hours if lime is used, or 6
hours is salt is used Drain, .
rinse and cover rind with cold
water. Cook until tender; drain.
Tie spices in thin cloth bag,
add with other ingredients and
simmer 10 minutes. Add water-
melon rind and simmer until
clear. Add boiling water if
syrup becomes too thick before
rind is clear. Remove spice
bag. Pack boiling into hot
jars, leaving one-eighth head
space; close. Process iq boiling
waterbath 5 minutes Start to
count processing time when
water returns to boiling Makes
6 pints.

indicate an improvement in

portant for all persons receiv-
ing disability payments to
report promptly when they
return to work.
"All other beneficiaries
should keep close check on
their earnings, " Mr. Talbot
said. "Students and other
beneficiaries who expect to
earn over $1680 in 1971 should
report this as early as possible,
even if they expect their checks
to terminate during the year."
Mr.and Mrs.J.O.Lusby met
his brotlier, Mr.and Mrs.Clay-
ton Lusby of Abilene in Big
Spring last Friday for a trip
westward . The couples spent
several days in Ruidoso, Red
River and returned by way of
El Paso to sightsee Juarez also.
