GOOD BD¥S STILL FOUND IN BEEF
Most cuts of beef remain low in
price, particularly the good and choice
igrades di beef now coming to market
in largo volume, Mrs. Gwendolyne
Clyatt, Extension consumer marketing
specialist, says.
Prices on round, sirloin, porter-
house and T-bone steaks háve advanc-
ed slightly due to heavy demand. Good
bmys will be found on chuck roasts
and steaks.
Chicken is plentiful and the price
makes it easy on the food budget.
Fryers háve attractive price tags, and
the birds can be prepared in many de-
licious disjhes.
Egg prices remain about the same
as a week ago, with lárge eggs the best
buy by weight.
In the vegetable line, fresh aspara-
,gus is stih available. Other good
c-hoices are green beans, carrots, cab-
bage, mustard, collards, fresh onions,
raclishes and lettuce. Cauliflower, broc-

May is salad month. So when you
piek the best greens in the market,
iťs important that they are stored
correctly. Any surface dirt should be
removed before placing the greens in
the refriegerator. If washing seems
necessary, be sure and drain all ex-
cess water oiff before storing in erisper
food bags or wax páper. Lettuce keeps
longer if the head is kept intact un-
til meal preparation time. Then sep-
arate the leaves needed for a salad,
wash in cold water, drain all excess
water off so dressing can ding to
leaves. Many greens lend themselves to
a tossed salad.

Finely chopped cucumbers added to
a sour cream or mayonnaise dressing
brings a diíferent touch to the dinner
salad. Today’s cucumbers come long
and straight and are favorite ingre-
dients for salads during the warm
months.

Americans spent only 19 per cent of
thelr take-home dollar on food.
Compare this to 30 per cent by the
British, 50 per cent by Russians, and
up to 90 per cent in sonie under-de-
veloped countries. Research on more
eříicient production and marketing,
and better ways to control insects and
diseases háve helped keep food costs
down.
“Keep cool with dairy foocls, sum-
mer’s hottest values” is the theme of
the 1964 June Dairy Month observance,

Don’t rely too heavily on that safe-
ty catch Safeties on shotguns are apt
to give a sportsman a falše sense of
security. The safety snap only blocks
the triggers so they can’t be pulled. It
doesn’t block the hammers so they
ean’t fall and hit the firing pln. And
hammers are what fire the guns!
