1 c. yellow commeal
1 c. flour
2 l baking powder
1 L salt
1 T. sugar
1 egg
1 c. milk
1/4 c. cooking oil
Mix first 5 ingredients in
small mixing bowl. Beat egg
slightly and mix with oil and
milk. Add this mixture to dry
ingredients.
Put cast iron skillet in oven
with 1 T. shortening...bacon
grease is mighty good, but
most of us don't have that
anymore, right?
Heat skillet about 3 min-
utes in oven; remove from
oven and grease entire pan
with melted shortening. Then,
pour batter in.
Bake for 20 to 25 minutes,
until golden brown, or dark
brown...as you desire.
Note: If you have a big old
pot of cooked pinto beans, or
"red beans" as my mother
called them, slice a big chunk
of this combread into a plate
and cover with beans and
juice. You will think you have
gone to heaven. Especially if
you serve this with thick slices
of sweet onion and cold frosty
glasses of buttermilk.

Tbe Texas Department of Health
announces there will be no flu shots
given this week. Shots will con-
tinue next week on Wednesdays
only from8:30-12:00and 1:00-5:00.
Medicare pays for flu shots. Ther

shots are given at the office at 219
S.E. 2nd street, across the hall from
the Medicaid Office in the old K-

Good Shepherd Program.
