SPICY LENTIL SOUP
1 large onion, diced
1 clove garlic, crushed and
chopped
1 large carrot, chopped
2 T. butter
1 1/2 c. brown lentils, washed
and picked over
3 large Yukon Gold potatoes,
peeled and cut into bite size
pieces
6 c. chicken stock or broth dash
cayenne pepper
salt to taste
black pepper to taste
11. Tabasco sauce
1 t. cider vinegar
IN a large pot, saute onion gar-
lic and carrot in butter, over low
heat until onion is translucent (take
care not to brown the garlic).
ADD lentils, potatoes, stock,
cayenne, salt, black pepper to
taste.
BRING to a boil and reduce
heat.
SIMMER until potatoes and
lentils arc very tender between 1
hour and 1 hour and 15 minutes.
STIR in vinegar and Tabasco
sauce.
COOK 5 minutes longer.
Note: The lentils in this recipe
do not need to be soaked.
Kathy’s Note: This basic soup is
easily made, easily modified and
vastly better than anything out of
a can. For those with adventurous
souls, pass more Tabasco sauce at
the table and serve a crusty "dip-
ping" bread with butter and green
salad. "This soup is even better
when made a day ahead and re-
heated before serving."
