Salmon Patties
1 can salmon, drained
(save Earn'd)
1 egg, slightly beaten
1 c. cracker crumbs
2 T. lemon juice
1/4 c. onion, minced
commeal for dredging the
cakes in. I put about a cup
commeal out into a pie
plate and roll each cake in
that just before I put it in the
skillet to cook.
Pour drained salmon into
bowl and remove whatever
bones and skin you wish. I do
this with my hands.....the book
says to do it with a fork!
Mix egg and cracker crumbs
with salmon. Add liquid from
salmon.... lemon juice and on-
ion. Form into flat cakes about
3" around. Roll in the com-
meal, or if you don't like that,
you can use more cracker
crumbs. Fry in hot shortening
until lightly browned.
Sauce:
1/2 c. Miracle Whip
1/4 c. mustard
1/4 c. pickle relish
1 T. lemon juice
Mix all this and if it is too tart
for your taste, add a Bttle sugar.
A drop or two of Tabasco sauce
will add zing, too!

its residents and their families and

entertainment with harmonica

dinner that will be served at noon
in the Nazareth Community Hall

Mother Society". Come to
