BRISKET
Trim excess fai from boneless brisket, lightly coat with unsea-
soned meat tenderizer. Salt lightly with broiled steak seasoning,
as sauce will be seasoned. Set oven at 200 degrees, no more than
250 degrees, as slow cooking is the secret. Place brisket in an
oven roasting bag and add sauce; cook as follows; 10 to 12 lb.
brisket...It oz. bottle hickory smoked barbeque sauce, or your
own favorite...bakc 10 to 12 hours...6 to 8 lbs...2 cups sauce.,
bake 6 hours...4 to 6 lbs... I cup sauce...bake 4 to 5 hours.
CHICKEN SPAGHETTI
1 large chicken hen & broth
1 bunch celery, chopped
2 green bell peppers, seeded and chopped
2 med. minced onions
4 oz. can chopped pimientos
3 doves garlic, chopped
I large can tomatoes
I can mushroom soup
2 lbs. long spaghetti, cooked
Grated Vclveeta cheese, optional
Cook chicken and debone, cut into bite-size chucks. Saute in
small amount of oleo, celery, pepper and onions. Add mushroom
soup, tomatoes, garlic and chicken and enough chicken broth to
make watery sauce. Salt and pepper to taste; simmer one hour.
Add cooked spaghetti to sauce mixture and add more broth if
needed. Serve with grated cheese, if desired. Very good served
with garlic French bread and green salad. Serves 20.
QUICK MEXICAN CASSEROLE
I lb. hamburger meat
I can each mushroom and chicken soups
1/2 small can green chilies
1/2 small can hot suace
1 can cheese soup
I pkg. cheese Doriios
I med. chopped onion
Brown meal slightly with chopped onion; then mix remaining I
ingredients, except cheese soup, together. Pour cheese soup over
top. Bake at 275 degrees about 30 minutes until flavors blend |
together. Serves 8 to 10.
SOUTHERN»STYLE BARBEQUED CHICKEN
I can (26 oz.) tomato soup
1/4 cup honey
2 Isp dry mustard
I tsp onion powder
8 bone-in chicken breast halves, skin removed
Mix soup, honey, mustard and onion powder, grill or broil chicken I
35 minutes or until done, turning often and brushing with sauce |
during cooking. Heat remaining sauce to a boil and serve with
chicken. Serves 8.
GLAZED CREOLE SHRIMP
1/4 cup chopped onion
I clove garlic, minced
I Tbsp butter
SAUCE: In a saucepan cook the chopped onion and minced
garlic in butter until tendin' but not brown.
ADD: 1/4 cup each chopped celery and green pepper, I /8 to 114 \
tsp ground red pepper, I bay leaf, 8 oz. can tomato sauce, 114 cup
catsup and 3 Tbsp. dry white wine.
Take chopped celery, green pepper, ground red pepper, bay leaf, j
1/4 tsp salt and dash pepper and add to saucepan, stir in tomato |
sauce, catsup and I Tbsp of the white wine. Simmer, covered, 20-
25 minutes. Remove bay leaf from mixture. Set aside.
Meanwhile, in a medium skillet melt 2 Tbsp butter, add the
remaining 2 Tbsp wine, 2 Tbsp light molasses, 2 Tbsp prepared
mustard and I Tbsp Worcestershire sauce. Bring to a boil; reduce ]
heat to medium high. Add one lb. large fresh or frozen shrimp,
peeled and devcined to skillet, cook and stir over medium heat 3
to 5 minutes. Four hot sauce over 2 cups hot cooked rice and top
sauce with shrimp mixture. Makes 4 servings.

NO CRUST CHOCOLATE PIE
2 oz. German sweet chocolate
1/2 cup butter or margarine
I tsp vanilla
3 beaten eggs
I cup sugar
3 Tbsp all-purpose flour
I cup chopped walnuts
Whipped cream
Walnuts
Preheat oven to 325 degrees. Lightly grease and flour a 9-inch pie I
plate. In a saucepan melt chocolate and butter over low heat, remove
from he*. Stir in vanilla.
Meanwhile in a small mixer bowl combine eggs, sugar, flour and I /4
tsp salt. Beat with electric mixer just till combined. DO NOT OVER-
BEAT. FoM in the chocolate mixture and the one cup chopped walnuts.
Pour into the prepared pic plate. Bake at 325 degrees one hour or till a
knife inserted near center comes out clean. Refrigerate the pie overnight.
Serve pie topped with whipped cream and additional walnuts. Makes
t servings.
APPLE EMPANADAS
Use frozen roll dough to make these delicious, sweet empanadas. Try
the apple filling or the chocolate filling. Drizzling the baked empanadas
with heated caralhcl or chocolate syrup adds a festive tough
I pkg. frozen rolls (parkerhouse or ranch)
I cup sugar
I tsp ground cinnamon
1(20 oz.) can prepared apple and cinnamon pie filling
I cup melted butter
1/2* I cup caramel sundae topping, melted
Remove rolls from bag and let thaw. Combine sugar with cinnamon,
set aside. Lightly grease two large sheet pans. On a lightly floured
surface, roll each thawed piece of dough into a 2-3 inch circle. Place
I-2 tsp ofanple filling in the center of each circle. Fold dough over and
seal ends. Brush topside Of empanada with butter. Bake in a preheated
375 degree oven for 15 minutes or until lightly golden brown. Remove
from oven and brush with melted butter and let cool on wire rack. Drizzle I
with heated caramel lopping.
CHOCOLATE EMPANADAS
Substitute apple filling with 1-2 teaspoons of semi-sweet
chocolate chipsper empanada. Follow the recipe above for apple
empanadas. Drizzle baked empanadas with chocolate sundae top-
sing in place of caramel.

will travel to NASA's Johnson
f Space Center (JSC) in Houston
this summer to . ticlpate in a
one-week summer internship.
Nominated by Robert Nichols,
Fai gen as been selected as one of
350 high school juniors from across
Texas to he part of High School
Aerospace Scholars (HAS). They
have been working to complete
10 web-based assignments during
the school year. They will apply
what they have learned during the
year, w hich will challenge them to
work as part of a tear o design a
mission to Mars.
The week long expriencc at
JSC includes a tour the facilities
and briefings by noted NASA
employees including astronauts.
These students and teammates
will conclude their experience
by presenting their proposal at a
luncheon to their parents, members
of the Texas legislature, Houston
Livestock Show and Rodeo,
Rotary NASA and JSC senior
management.
the state of Texas, in partnership
with JSC and the Texas educational
community, developed HAS in
1999 to encourage more students
to pursue studies and careers in
science, technology, engineering
and mathematics (STEM Mure
than 1,500 students from across

Living Stones looking for stones
Hello readers. Most of you, that
had children of family members
graduating, have made it through
graduation hopefully and survived.
Now tor those of you who have to
prepare for college, that's a story
within itself So get plenty of rest
before they get ready to leave; find
as main ways as possible to relax
your mind. It's a wonderful experi-
ence but very stressful for first tim-
ers.
We're still wanting to hear from
the area churches that will be hav-
ing vacation Bible school. Please
call us so we can get this informa-
tion out to the general public; be-
lieve it or not, parents are seeking
churches to send their children to
for the summer. Not only do they
get out of the house for a few hours
but some get spiritual nurturing and
fellowship with others in their age
group. So let us share your Bible
school news with the community.
I want to send out condolences to
the Henderson family of Livingston
and Wright family of Goodrich
and Houston. We want to send our
prayers out to them during their
time of loss. Please remember to
keep Helen Henderson in your
prayers as well.

Sunday, June 8th begins revival services at First Baptist
Church, Goodrich. Monday June 9th at 10 in the morning
begins Vacation Bible School. College and Seminary
students will assist in these ministries. Youth meetings
will be held each afternoon Monday through Thursday
with a county wide youth rally Thursday night. For more

COUPLE PLANS JUNE WEDDING-Stacey Lynn Vasut,
daughter of Arthur and Linda Easton of Corrigan, will wed
Jesse Wade Platt, son of Morris and Sherry Platt of Livingston,
at 6 pan. on June 28 at Union Springs Missionary Baptist
Church.
FFA REPRESENTATIVES VISIT THE ROTARY-Ray Gear-
ing, right. Rotary Club president, introduced Stephen Smith, left,
and Charles Moore, retiring and incoming presidents of Future
Farmers of America (FFA) at the club’s meeting on June 5. The
club also presented the students will a check for use by FFA.

The bride is the daughter of Dr.
and Mrs. Darrell Myers and the
groom is the son of Mr. and Mrs.
Alvin l.aird all of Livingston and
Gina Childress of Sweeny.
The bride honored the memory
of her best friend, Katie Moseley,
by being escorted dow n the aisle to
Katie’s arrangement of "When A
Man Loves a Woman" and carried
a bouquet of three dozen red roses
with her picture in an antique
frame.
The church was lit with 30
Christmas trees and 14 brass
candelabras lined the aisles.
Brother Mark Martin of
Colmesneil, a lifelong friend of
the bride, performed the double
ring ceremony.
Kali Jo's gown was a diamond
white strapless, pearl encrusted
Alfred Angelo original creation.
Her mother created her fingertip
veil and adorned it with pearls
from her bridal veil. Maris Myers
of Lumbcrton. cousin of the
bride, served as maid of honor.
Bridesmaids were Mcagan Savage
of Orange. Crystal Davis of
Murchinson, Heather Hendrix of
Big Sandy and Susan Wallace of
Livingston. I hey were dressed in
Christmas red evening gowns and
carried off-white rose bouquets.
Rooster and Olivia Laird served
their brother as ring bearer and
Mower girl. Steven's best man
was his brother, Justin Bickford
of Huntsville and groomsmen
were Luke Myers of Orange, the
bride's brother, Landon l.aird, the
groom s brother, Ty ler Lauhoff and
Jody McQueen, all of Livingston.

The bride is a graduate of Lamar
State College's Nursing program
and Steven is serving in the United
States Marine Corp. They are
making their home in Oceanside,
Calif, where Steven is stationed.
COUPLE HOLD MILD ARY WEDDING- Kali Jo Myers and Ste-
ven Laird were united in marriage at Lake Tomahaw k Christian Re-
treat with a traditional U.S. Marine Corp Sword Ceremony. The
couple is residing in Oceanside. Calif where Steven is serving in the
U.S. Marine Corp. Parents of the couple are Dr. and Mrs. Darrell
Myers, Mr. and Mrs. Alvin Laird all of Livingston and Gina Chil-
dress of Sweeny.
