Cooking two birds is easier on the cook, too, for they will roast
in about one-half the time required for a very large bird. Here's a
new stuffing recipe. It uses cranberries inside the turkey for a
change:
Cranberry Staffing
I quart fresh cranberries (1 lb.) 2 cups seedless raisins
1 cup sugar 2 teaspoons salt, about
1 cup butter or margarine, i teaspoon ground cinnamon

6 quarts bread cubes 1 cup water or giblet broth
(2 to 3 day old bread)

To prepare Cranberry Butter,
simmer washed berries in sugar
until they burst, using 2 cups
berries to 1 cup each of sugar
and water. Continue cooking the
cranberries until liquid is well
thickened then stir in 1-4 cup
each of brown sugar and butter
or margarine. Serve hot or chill-
ed.
Fresh cranberries also are the
basis for a number of rosy ton-
ed, easily prepared desserts.
Cranberry-Apricot Dessert is
company-perfect and can be pre-
pared w-ell in advance of serv-
ing.
All it requires is 1 pound of
fresh cranberries, one No. 2 1-2
can apricot halves, and 2 pack-
ages lemon-flavored gelatin. It
will serve from 6 to 10 persons
nicely. To prepare, pour
syrup from the apricots into a
sauce pan and add washed era* t
nbertries. Cover and simmer un-
til berries burst.
Then, add the apricots, re-
serving one-half an apricot for
each serving. This is for a gar-
nish. Puree the cranberry-apri-
cot mixture by pressing through
a sieve or colander or whirling
quickly to an eiectrfe Mender.
Add enough water to the pureed
mixture to bring measure to 4
1-2 cups. Pour 2 cups of this
mixture Into sauce pan and bri-
ng to a boil, then add 2 packa-
ges lemon flavored gelatin
and stir until dissolved. Add re-
maining puree.
Allow to cool, stir well to blend
gelatin throughout mixture and
pour into molds. Place in re-
frigerator until set. Unmold and
garnish with reserved apricot
halves, and sweetened whipp-
ed cream. Use a 6-cup mold or
several individual molds, as de-
sired.
Fresh Cranberry Pie is ano-
ther dessert that will tempt he-
arty Thanksgiving Day appeti-
ties.
To prepare the filling for this
double-crust creation, you need
3 cups washed fresh cranberry
halves. Place the berries into
a sauce pan and add 1-2 cup
