From Your County Agent
Social Security
"There are not many shop-
ping days left until Christmas,
That fact should be a remind-
er to those persons who plan
to work during the holiday
season, " Gus Jones, Manager
of the Sherman Social Secur-
ity Office said today. Jones
was asked of what it should
remind those persons. He
said it should remind them to
apply for a social security
card today if they do not
have a card. Or, if they have
lost their social security card,
it should remind them to ap-
ply for a replacement card
today.
"By taking care of this
matter now, " Jones continued
"the person will be doing
himself and his prospective
employer a favor. He will be
ready to begin his employ-
ment properly on the first
day he reports to work. And
his employer will be able to
give him proper social secur-
ity credit for the wages he
earns during the holiday sea-
son. "
Jones stated that many stu-
dents will be taking a part-
time or temporary job for the
first time during the next
30 days. Some of these stu-
dents have never had a social
security card. They should
go to the nearest Social Secur
ity Office and apply for a so-
cial security card.
It was emphasized by Mr.
Jones that the procedures for
issuing social security cards
have changed in recent mon-
ths. He said the changes maki
it more important than ever
that the person gives accurate
information when he complete
the application for the card.
And once a person is assigned
a number, the person should
make certain he always writes
or give the number correctly
when it is required. By doing
this, the person will avoid
errors in his social security
reco rd during his working
ye ars. And when he is quali-
fied to receive monthly social
security payments, he will
have a complete and accurate
official record of his earnings.

tension Agent.
Understanding and cooper-
ation between the hunter and
the cook are two ingredients
for tasty deer.
A good flavor is character-
istic of wild game, but the
undesirable "gamey" flavors
of meat ruined before it hits
the kitchen is another matter
Flavor is a result of three
factors--condition of the
game, handling in the field
and cooking procedure. Old,
poor animals will be less ten-
der than young ones, but
range conditions are reported
good throughout Texas this
year, so likely game will be
in good condition.
Proper handling in the field
centers on proper cleaning anc
quick cooling. Hunters gener-
ally agree that proper clean-
ing demands a well-placed
shot in a vital area that doesf'
not rupture intestines Dr paun-
ch.
Quick cooling delays spoil-
age, so the animal should be
drawn at once. Move the ani-
mal so its head is uphill.
Make a ventral cut from the
base of the tail to the breast
bone and roll out the viscera,
Avoid slashing the intestines
or stomach. Wipe the body
cavity with clean cloths or
paper towels, but don't use
water.
Hanging the carcass will has
ten cooling. Protect meat
from flies and dust with muslii
or cheesecloth bags which let
air circulate. Heavy tarpaulin
and airtight game bags keep
body hear in and slow down
cooling.
Proper loading and trans-
porting the animal is essen-
tial wrapped in the protective
cloth—on top of the car is
recommended. Also, on cool
days, the car trunk offers a
safe place. Avoid carrying
animal on car or truck hoods
and fenders , as hear from the
sun and the motor can ruin
all previous good care. Once
the animal has been handled
properly in the field, the cook
should remember some basic

Dry hear, such as oven
roasting, broiling, pan-broil-
ing and frying, is suitable for
young and tender game. Bast-
ing with additional fat may be
necessary if the mear is lean.
It's best to cook older and
less tender game by moist
hear, such as braising, stew-
ing or simmering. Swiss steaks
and pot roasts are cooked by
braising—add a small amount
of liguid to,meat cooked in a
covered container. Long, slow
cooking tenderizes meat with-
out drying it.
