A BLAZING SUCCESS

sane fireworks, put them in your
skillet. Turn regular hamburgers
into Flaming Pepper Burgers and
set them ablaze with bourbon just
before they're served.
FLAMING PEPPER BURGERS
Lib. ground beef
1 egg
1 teaspoon instant minced onion
1 teaspoon salt
1 tablespoon coarsely cracked
black peppercorns
2 tablespoons butter
1/4 cup chopped parsley
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
2 tablespoons bourbon, warmed
Combine beef, egg, onion and
salt. Shape into 4 patties. Sprinkle
both sides of each with cracked
pepper | put peppercorns in small
bag and smash with mallet or
rolling pin |. Press very lightly into
burgers. Let stand about 15
minutes. Sprinkle bottom of a
heavy skillet with salt and let it get
very hot. Cook hamburgers about 3
minutes each side for medium rare.
Reduce heat |or move skillet to a
cooler part of the grill| and add
butter, parsley, lemon juice and
Worcestershire sauce. When
heated through, ignite bourbon and
pour over. Serve when flames
subside, spooning pan juices over.
