A Heart-Warihing Quiche For Valentine’s Day West Elementary
(DM)-If you’re a fan of well-seasoned foods, try Picadillo-Style Pork
Chops. This South of the Border cold weather recipe is hearty and easy to
make. Once the chops are browned, they simply simmer in a full-flavored
liquid of Kikkoman Teriyaki Marinade & Sauce and canned tomatoes, accent-
ed with chopped bell pepper, onions, raisins and aromatic cumin. Bottled
teriyaki sauce, a blend of naturally brewed soy sauce, wine, sugar and select
spices, has an unsurpassed spicy-sweet depth of flavor that's a perfect base
for this zesty entree. Steamed broccoli and rice are tasty complements to these
succulent pork chops.
PICADILLO-STYLE PORK CHOPS
4 pork chops, each about 16 inch
thick
1 tablespoon vegetable oil
1 can (1416 oz.) no salt added
tomatoes
Vi cup Kikkoman Teriyaki
Marinade & Sauce
1 small green bell pepper,
coarsely chopped
1 small onion, coarsely chopped
16 cup raisins
y, teaspoon ground cumin
Hot cooked rice
Brown chops on both sides in hot oil in large skillet over medium-high heat.
Drain off excess fat. Stir in tomatoes and teriyaki sauce. Sprinkle green pep-
per and onion over chops. Cover pan and simmer .10 minutes. I urn chops
over, stir in raisins and cumin. Simmer, uncovered. 15 minutes longer, or
until chops are tender. Serve over rice. Makes 4 servings

Valentine Quiche
1 prepared 9” refrigerated
pie crust
2 teaspoons olive oil
1/2 cup sliced mushrooms
2 tablespoons chopped
green onion
6 large eggs
3/4 cup half and half
I tablespoon Dijon mustard
1/8 teaspoon black pepper
I cup shredded medium
sharp cheddar cheese
1/3 cup drained and chopped
roasted.red pepper
Preheat oven to 350’ F. Lightly spray
bottom of Heart Springform Pan with
vegetable pan spray. Roll pie crust out
to 11 1/2 inches in diameter and press
into pan, pressing dough against
bottom and 1” up side of pan to
conform to the heart shape. Prick with
fork. Bake 15 to 20 minutes or until
light golden brown. Remove from
oven and allow to cool. Heat olive oil
. in frying pan and cook mushrooms
and onions until soft, about 5 minutes;
set aside. Whisk eggs with half and
half, mustard and black pepper. Stir in
mushrooms, onions, cheese and red
pepper; pour into crust. Bake 35 to 40
minutes or until set. Let cool 10
minutes or to room temperature.
Makes 4 to 6 servings.

(cefpr.ozil) against antibiotic-resis-
tant bacteria in AOM. The study,
conducted from December 1994 to
October 1995, found that Cefzil, an
oral cephalosporin antibiotic, is an
effective and well-tolerated alterna-
tive therapy for children with AOM,
including cases of recurrent infection
and previous treatment failure.
The study, presented by Samuel E.
McLinn, M D, F.A.A.P., a private
practice pediatrician and chairman of
Infectious Disease, Scottsdale
Memorial Hospital,. Scottsdale,
Ariz., is the first large clinical trial in
AOM to confirm that the most com-
mon bacteria for recurrent otitis
media in this subset of children were
S. pneumoniae, H. influenzae and M.
catarrhalis.
What makes this study unusual is
that it included children with recur-
rent otitis media and previous treat-
ment failure. Children with these
characteristics often are excluded
from clinical trials. Additionally, all

“Cefzil produced greater than or
equal to 96 percent resolution or
improvement of key presenting
symptoms such as ear pain, fever
and irritability in patients who had
those symptoms upon enrollment.
Overall, Cefzil produced high clini-
cal response rates to the bacteria
associated with recurrent acute otitis
media, S. pneumoniae, H. influenzae
and M. catarrhalis," said Dr.
McLinn.
Cefzil therapy (30 mg/kg/day, a
powder for oral suspension) taken in
two equally divided doses for 10
days, was well-tolerated by children
in the study, and side effects related
to therapy were infrequent. The most
commonly reported adverse events
were diarrhea (3%) and rash (2%).
When treated promptly and effec-
tively, AOM typically is not serious.
However, if improvement in the
child does not occur within 48 to 72
hours, it may be necessary to see a
physician to switch antibiotics.
Cefzil represents an effective and
well-tolerated alternative therapy for
children with hard-to-treat AOM.
Cefzil, which was given clearance
recently by the U.S. Food and Drug
Administration for the treatment of
acute bacterial sinusitis in adult and
pediatric patients, is the only
cephalosporin approved for both
sinusitis and otitis media in pediatric
patients.
