the profession for any butcher not to

Importance of Salads
In Dietetic Value
Salnd has nn important place in tho
diet, says Miss Helen Green, instructor
in domestic science in the Kansas State
Agricultural college.
While salail is not as substantial a
dish as some included lu the daily
menu, there are lather things ,to be con-
sidered. Salad set in a nest of lettuce
leaves is appetizing. Tlio dietetic value
of the minerals In the fruit and vege-
tables and the oil in the dressing can-
not be overestimated.
Some vegetables and fruit® which
are quite necessary to tho diet would
not bo utilized at ail if they were not
made into salads. Carrots, for exam-
ple,. prepared in' salads in their raw
state furnish valuable food elements.
Sahids furnish bulk, an important item
to be eQuaiflCi'cd ln preparing menus.
A simple salad is more attractive and
has a better dietetic value than an
elaborate mixture of expensive foods.
A light salad may bo served with a
heavy dinner as a substitute for a des-
sert, adding to the dietetic value of the
tpieal as well as reducing its cost •
Setting Colors In Cotton
At the present time we hear muchf
about tho poor quality, of dyes used. It
is possible to set some colors in wash
materials. An authority on the subject
says salt will set browns, blacks and
pinks. Definite proportions cannot bo
named, but two- cupfuls of salt to one
gallon of cdld water will be enxigh lu
most cases, if this amount doed not
stop the bleeding of the color add more
until this is accomplished.
Onc-half cupful of vinegar to one gal-
lon of water will be effective for set-
ting blues.
One tablespoonfhl of sugar of lead to
one gallon of water should be used for
lavenders. The an gar of lead should
be handled carefully, as Jit is deadly
poison if swallowed. *

the Sherman Chamber of Commerce,

tin entitled "Builders of the Red
River Valley Fair." The bulletin'is

In discussing this, C. A.' Shock,

OPPOSE CHANGES IN THE
TEXAS HOMESTEAD LAW
Austin, Tex.. Jan. 4,—Proposed
changes in the homestead provision
of the constitution to facilitate the
operation of the Federal Farm Loan
Rank act will la1 strenuously opposed
by Senator .1, (’. McNealus. Thu
amendment, desired by Representatives
(’. (>.' lsine.v and other legislators
simply make the homestead a “basis
of credit,” Senator McNealus de-
clares.
"The Constitution should never lie
changed to make the homestead a
basis of credit.’’ Senator McNealus
said today. “The homestead can’t he
beuofifled by the Federal Farm I on n
Rank. The land owners and land-
lords, who already can get all the
money they want, will he the only
ones benefitted, us the hank will he
Hie only ones hem-fitted, as the bank
will enable them to get money at
a lower rate of interest. The man
xvthout land will have no collateral,
to put. up for loarfs.
“A. limitation on the value of prop-
erty classed as homesteads is the only
clmnge I would advocate. In cities
lids limit should be $10,000 and in
(lie country $5,000. Such n limita-
tion could he statutory, but it should
lie put into tlio organic law. I also
would favor exempting tlio home-
stead from taxation.
“The homestead provision in tlio
Constitution of Tex sis is the best pro-
tection in the world for the family,
and the drafters of the Constitution
had tills in mind when the provision
was made.”
The constitutional convention which
Senator McNeaftis wants the legisla-
ture to cull should draw iqi a Cpnsfl-
tUtiou to help the landless *fmni be-
come a land owner and to discourage
the growth of landlordism in Texas.
