Start with: roast beef cut into small
cubes — set aside

With Oriental Slaw

3/4 cup vanilla low-fat yogurt
1/4 cup creamy peanut butter
1 teaspoon grated orange rind
Dash cayenne red pepper
Oriental Slate
1 1/2 tablespoons rice wine
vinegar
2 tablespoons soy
sauce
2 1/2 teaspoons sesame oil
1 1/2 teaspoon freshly grated
ginger
1 1/4 cup finely julienne-cut
or shredded carrots
1 cup fresh bean
sprouts
1 4 cup chopped green
onion
3 tablespoons chopped
cilantro
12-16 ounces sliced, cooked turkey
breast
4 Bays English Muffins, split,
toasted
1/4 cup chopped peanuts
For Sauce, combine all ingredients;
set aside.
For Slaw, combine vinegar, soy
sauce, oil and ginger in medium bowl.
Toss with remaining ingredients ex-
cept turkey, muffins and peanuts.
To serve, spread each toasted muf-
fin half with about 1 1/2 tablespoons
of the sauce. Top with l 1.2 to 2
ounces of the turkey. Spoon on about
14 cup of the slaw. Sprinkle with
chopped peanuts.
Serves 4 to 6.

Old-Fashioned Pecan Bread
(Makes one 9x5-inch loaf)
teaspoons vanilla extract
cup Borden* or Meadow
Gold' Milk
1 (9-ounee) package None
Such' Condensed
Mincemeat, crumbled
1 cup chopped pecans, toasted
2'/2 cups unsifted flour \'h
l'/i teaspoons baking powder 1
'/a teaspoon baking soda
'/n teaspoon salt 1
Vi cup margarine or butter,
softened
% cup sugar
2 eggs
Place rack on lowest position in oven; preheat oven to 350'. Combine flour,
baking powder, baking soda and salt. In large mixer bowl, beat margarine
and sugar until fluffy; beat in eggs and vanilla. Add milk and flour mixture,
mix well. Stir in mincemeat and pecans, [ urn into greased 9x5-inch loaf
pan. Bake 1 hour and 25 minutes or until wooden pick inserted in center
comes out clean (after 1 hour of baking, loosely cover with toil to prevent
overhrowning). Cool 10 minutes; remove from pan. Cool. Garnish as
desired. Store tightly wrapped.
