Texas Techs national championship meat judging team includes local student
Texas Tech University stu-
dents earned the school’s 10th
national championship in meat
judging on November 18 at the
American Meat Science As-
sociation’s International Meat
Judging Contest held in Da-
kota City, Nebraska. Bo Hutto,
a 2010 graduate of Hondo High
School is a member of the team
and is pictured above, seventh
from the right.
The team won the beef judg-
ing, lamb judging, and pork
judging; specifications; plac-
ings; and reasons divisions. It
finished second in total beef
and beef grading.
Hutto, a junior from Hondo,
was named the high-ranked
individual. He and teammate
Dan Crownover, a junior from
Italy, both earned the distinc-
tion of First Team All-American.
The members of the All-Amer-
ican Teams are selected based
upon scholastic achievement
and competition performance.
The team won the contest in
Nebraska by a 50-point margin
and also won five of the six na-
tional contests during the 2012
meat judging season. “One of
the most impressive things
about this team is how well
they responded to adversity,”
said Mark Miller, Horn Pro-
fessor and San Antonio Stock
Show & Rodeo Distinguished
Chair in Meat Science. “They
courageously came back from
a loss at the Eastern and com-
mitted themselves to working
hard as a team to win decisively
at the American Royal, Cargill
and the International.”
Along with Miller, the team
was coached by graduate stu-
dents Collin Corbin and Henry
Ruiz. The remaining teams in
the top-five included Kansas
State University, Oklahoma
State University, Michigan
State University and Angelo
State University.
According to program of-
ficials, the meat judging pro-
gram strives to teach students
communication skills, rational
decision making skills and give
students the ability to excel in
a competitive environment
under pressure. These skills
are developed to help students
excel both professionally and
personally.

side. “Is there any possibility
of getting that holding area
ready now so we can move
the tmcks off the sides of the
roads?”
Cox said a crushed rock
base would need to be placed
over the dirt and compacted
to allow tmck parking on the
lot.
“If there is a question about
where we are going to get
materials to put in a nice big
holding lot, the reconstruc-
tion project will likely produce
a lot of spoil material,” said
the KSA engineer, who noted
the RELMCO contract called
for the project to completed
in 60 days but he expected
the completion in closer to 45
days. “That could be a good
source of base material.”
“Even during the 45 to 60
days, couldn’t we put signs
up, or something, to stop
these trucks from parking on
the sides of the roads?” asked
Danner.
“They are going to be put-
ting road closure barriers on
that 45 degree road right at
Castro,” said Cox of Twining
Street. “Then, obviously, Cart-
er at Castro will be closed off
as well. If the tmcks are used
to parking there and they have
no other place to park, you will
likely see the trucks start park-
ing on Harper.”
“The edges of those roads
are starting to fall apart,” said
the mayor.
“Unfortunately, and I don’t
like making predictions, it is
pretty obvious that Harper
and Arnold are going to be in
pretty bad shape even with
just 30 days of truck traffic,”
said Cox. “You are going to be
looking at some pretty dete-
riorated road surfaces.”
“We couldn’t figure out a
way around that,” said Litch-
field of the inevitable road
damage until the parking lot
can be built.
“Part of the attempt to mit-
igate that is the temporary
turn lane,” offered Cox. “The
only other option I saw was
to reconstruct Carter while
still under use and that would
have been enormously ex-
pensive because (RELMCO)
would have had to imple-
ment one way traffic 24 hours
a day. They would have had to
have flaggers, equipment and
lights there 24 hours a day.”
“Can’t we put up signs say-
ing ‘No tmcks on shoulder’
or ‘No parking on shoulder’?”
asked Place 5 Councilman
Keith Lutz.
“The problem with that
is similar to the problems
repairing the sewer sys-
tem blockages,” noted Cox.
“When you fix one bottle-
neck, you are just pushing the
bottleneck further upstream.
Ultimately, the trucks need a
place to park.”
“Once you have the hold-
ing lot in place you definitely
need some sort of signage in-
dicating that is the designated
truck parking area,” said Cox.
“But until that is in place, you
are going to see trucks park-
ing wherever they can park.”
Lutz offered the motion
to award the bid for the
Carter Avenue Reconstruc-
tion project to RELMCO for
$378,951.46. The motion
passed by an unanimous 4-0
vote after receiving a second
from Place 4 Councilwoman
Ann-Michelle Long.
“This morning there must
have been a dozen tmcks
lined up on the road in front
of Blueline,” said Danner on
Tuesday. “They are parking
on the side of the roads and
it’s chipping off the sides of
the pavement. If we can get
them in this holding yard
at Arnold and Carter across
from Blueline, then they will
park in there and leave from
there.”
