Cool Borscht and Sour Cream

Borscht, originated in East Europe, is now an integral part of
the Jewish menu. It calls for some messy work, like cleaning, peel-
ing and cutting the beets. Since we have many convenient foods and
utensils, we can duplicate the good flavor of old-time borscht with
no effort.
1 can (1 lb.) beets
2 cansful water
2 tsps. pareve soup-mix
2 tbsps. lemon juice
1 tsp. sugar
1 egg yolk
dash pepper
sour cream
Liquify beets in the blender,
adding juice.
Pour into a pot
and add the
soup-mix, 2 cansful water and
