Fish can taste great without all the calories
It is really not a big surprise.
We all know that fish is good for
•s. Loaded with vitamins -and
cholesterol-gobbling oils. Lots
better than the cholesterol-laden
beef steaks we've grown up with in
Texas...better even than the chicken
and turkey we've learned to eat more
often as an alternative.
But how do we cook the stuff?
That is, how do we cook it where it
will taste good without dipping it
in commeal and deep-frying in fat,
which effectively negates any
dietary benefits? That's the big
question!
Add to that the time factor for
today's busy career-duel home-
makers. As it turns out, fish is
perfect for the microwave or wok.
And it taste great, without deep
his was demonstrated to a
group of about ISO guests at a free
cooking class held last Wednesday
at Huguley Hospital's New Image
Amphitheater. Virginia Pribyl, a
licensed dietitian, who has taught
classes in the Metroplex for the
past 12 years, conducted the demon-
stration, which was also hosted by
the New Direction Weight Loss
Program to promote "heart-healthy
eating."
Sharon Bryant, R.N., and
director of the New Direction
program, said that new research has
divided the food groups into six,
rather than the traditional four, and
that nutritionist are now recom-
mending "grazing" of more
frequent, smaller meals rather than
three large meals per day.
She also added that today's
packaging labels, such as "no
cholesterol' are, often deceiving.
"The best way for the average
perron to see through the smoke
screen' is to utilize the numerous
education, classes, programs and
btxiks that are now available."
Four recipes, each featuring a
different variety of fish, some
common like Tuna, and others with
exotic sounding names like orange
roughy’, "grouper,' and 'hokie' were
demonstrated.
Each participant was invited to
sample a healthy portion of the
dishes as they were prepared. All
were delicious as well cs low-fat
and low cholesterol.
Pribyl, who is a former
hospital dietician, began ,ier career
in nutritional classes when she was
demonstrating microwaves for a
leading manufacturer. During the
last five years, she has taught
several corporate fitness programs,
including Surgikos Wellness
Program.
In October 1988 she published
her first cookbook, "Recipes for
Living" which is boasted of as a
common sense translation of
nutritional knowledge into
practical, everyduy use. The one
year project transformed many
traditional family recipes into
quicker, healthier versions, along
with a computer generated break-
down of calories, fat, cholesterol
and sodium per serving.

Question
Of The Week
QUESTION: My child ia complaining of abdominal pain. Could
it be appendicitis? Should I see a doctor?
ANSWER: It's possible that your child has appendicitis, but
other abdominal disorders often mimic the symptoms
* of appendicitis. Acute appendicitis results from bac-
terial infection of the appendix. The condition is most
common in adolescents and young adults between
the ages 15 - 24.
Symptoms of appendicitis typically include mid-
abdominal pain that moves to the lower right side and
is worsened by movements, deep breathing, cough-
ing or sneezing. Nausea, vomiting, diarrhea, or consti-
pation may also occur. Sometimes a mild fever - up to
102° - may be present.
■ Treat mild generalized abdominal pain, without
fever, by giving clear liquids. Observe closely for an
increase in pain, fever, nausea, vomiting, constipa-
tion, or diarrhea. If pain continues or symptoms
increase, consult your physician. Remember, prompt
treatment is important in avoiding further com-
plications from appendicitis.
