FUDGE CANDY
4Vi c. sugar
Vi lb. butter
Ltall can Carnation milk
-or Vi pt. cream
Boil together at a hard boil
for exactly 6Vi minutes, stir-
ring occasionally. Take off
fire and put in this mixture:
2 large and 1 small Her-
shey bars
1 pkg. Hershey’s or
Baker’s chocolate chips
1 pt. marshmallow cream
Stir till all is melted (never
beat), then stir in 2 cups
pecans as quickly as possible
and pour in greased pans im-
mediately. Makes 5 pounds.
LEMON PIE
1 c. su
6 tsp. ! ( .
VijtsOf Salt (optional)
. ofltAcRoiling water
2 egg yolks
1 Tbsp. butter
Juice of one lemon
Mix sugar and flour and
add gradually to water. Cook
until thick. Blend in beaten
egg yolks, butter, lemon
juice. Cook 2 minutes longer.
Pour in baked pastry shell
and top with merangue.
LAZY DAISY CAKE
, 2 eggs
1 c. sugar
% tsp. salt
1 tsp. baking powder
Vi c. milk
4 Tbsp. butter or
margarine
1 tsp. vanilla extract
Vfe c. coconut
■A c. chopped pecans
5 Tbsp. brown sugar
3 Tbsp. cream
Place eggs in large mixer
bowl; beat until ltgtfirand
fluffy. Add sugar gradually;
beat until fluffy. Sift flour,
salt and baking powder
together. Add dry ingre-
dients to egg mixture; beat
well. Combine milk and 1
tablespoon butter in
saucepan; bring to boiling
point. Add milk mixture to
batter, mix well and add
vanilla. Blend well. Pour in-
to greased and floured 8”xS”
baking pan. Bake at 350* for
30 minutes. Mix coconut,
pecans, brown sugar, cream
and 3 tablespoons butter in
saucepan. Cook until of
spreading consistency.
Spread on hot cake. Broil un-
til brown.
NEVER FAIL PIE CRUST
(Makes 3 pies)
3 c. flour
1 tsp. baking powder
1 tsp. salt (omit for diets)
lVb c. shortening

1 tsp. vinegar
Form into roll, Wrap in
wax paper, and refrigerate.

In November, 1977, Opal was elected to All the unexpired
city council term of Howard Hanyan. In 1978, she ran fer tile
office of mayor against Bill Taylor. “I beat him five to (toe,”
she recalled. She served two years as Mayor of Joshua from
1978 until 1980.
“This town was almost unprotected and things were get-
ting out of hand,” die said, “when I took office.”
“During my term, we hired three full-time police officers
and two reserves and bought two new patrol cars,” she said.
“We set up a leash and dog tag law. A zoning board was
organized and a building code was drawn up. We also hired a
CPA for book work, a city secretary and a warrant officer.
“And, while I was in office, the council bought a lot for
$10,000 for future city use, did repairs on the city hall roof,
and we were never in the red. We also hired a man to do
street work,” Opal renumerated, sounding mote and more
like she may be a candidate in the upcoming 1982 mayoral
election.

“I guess one reason I enjoyed the office so much is that I
felt lute I was doing something for other people. My husband
always wanted me to be mayor of a town. When he died, I saw
the needs in this town and I was determined to carry out his
wishes.”
In the beginning, Opal said there was great opposition to
her serving as mayor. “Some resented me as a woman;
others may have for some other reason, but they didn’t let me
know,” she said.

1 can whole kernel corn
(drained)
1 can cream style corn
1 egg, beaten
^4 tsp. salt
6 crushed crackers
1 Tbsp. oleo
*4 c. evaporated milk
V4 c. water
1-2 Tbsp. pimentos
2 Tbsp. chopped onion
2 Tbsp. chopped green pep-
per
Saute onions and peppers,
add 2 kinds corn. Beat egg
and milk, pour in pan. Cook
on medium heat to warm.
Put in casserole. Melt but-
ter, pour into cracker
crumbs, mix with fork. Put
on top casserole, top with
grated cheese.
Cook 25 minutes at 350*.
GERMAN GREEN BEANS
A CABBAGE
3 slices bacon
Vt c. vinegar
Mi c. sugar
3 Tbsp chopped onion
3 c. shredded cabbage
salt k pepper
1 can (16 oz.) French Style
green beans
Cut bacon in 1” pieces and
cook in skillet until crisp,
remove bacon, add vinegar,
sugar, onions, cabbage, salt
k pepper to the fat in the
skillet. Cover. Simmer 5
minutes. Stir in drained
green beans and cook 5
minutes. Pour into serving
dish and top with bacon bits.
