Amy Luckett, our featured
cook lor this week, was bom in
Garland and moved to Rains
County with her parents in the
summer of 1987.
Amy met her husband, Billy
Luckett in school at RHS. Am
had set Billy up with her friero
which evidently was not to be,
because Amy and Billy were
married eight years ago in Janu-
ary. They now have a son Cody
Wayne Luckett, who was sev-
en years old August 17, and
there will be another member
added to the family in April
1997.
Amy likes to live in Rains
County, because it is small,
everyone knows everyone and
the people are all friendly.
Billy who has worked at Dai-
Air Castings in Point .since
;raduating from Rains High
ichool, has been supervisor for
nine years.
Amy teaches eighth grade
math in the Greenville School
District. She graduated from
ETSU two years ago, majoring
in elementary education, spe-
cializing in math.

ents live off highway 2324, and
both have large families. Amy
tells me that Cody has seven-
teen grand parents, twelve of
which live in Rains County,
according to Amy, Billy’s fami-
ly is half of Rains County.
Billy,s hobbies are riding
horses, his three wheeler, fish-
ing and hunting, Cody loves T-
Ball, Harley Davidsons, and
riding his 4-wheeler that his
PaPa bought him. As for Amy,
she says, "I just like riding with
my two guys, fishing and read-
ing."
The Lucketts are building a
new house on County road
1307 just of 2324; the same
location where Billy spent his
childhood days growing up.
Family pets are a red heeler
called Molly and a red poodle
named "Rhett” Butler. -
The Lucketts attend the
Emory First Baptist Church.
Once a year they take a vaca-
tion on the coast with Billy’s

After layers are complete top
with whole tomatoes, cut In half,
and sprinkle with lots of parme-
san cheese. Bake at 350 for 45
minutes. This recipe is excellent
to make ahead of time and
freeze.
Blueberry Pound Cake
1 Duncan Hines Butter Cake
mix (golden recipe)
3 eggs
! c. oil
Ibsp. water
1 c. blueberries (drained)
1 Boz. pkg. cream cheese soft-
ened.
Mix all ingredients except blue-
berries. Fold them in last. Bake
in a greased and floured bundt
pan tor I hour and 10 minutes
at 350.
Mexican Corn bread
2 boxes Jiffy commuffin mix
2 eggs
'ti to 7« c. milk
1 can cream style corn
1 lb. ground round, browned
chopped onions & bell pepper,
sauteed
1 tsp. garlic salt
mom, Barbara; and Billy and
Amy go to Hot Springs, as Amy
puts it, "for our get away".
When asked about one spe-
cial vacation or event, Amy said
it was when they went to Sea
World.
Amy tells me her favorite
recipes to prepare are desserts.
Billy’s favorite food is any
thing Italian and Cody’s is pizza
(homemade). She says that both
of her guys love to help her in
the kitchen.
She is sharing some of her
recipes with us and we hope
eveiV one enjoys them.

Broccoli & Bacon Salad recipe
Amy says, "This recipe really
sounds yucky, but my great-
grandmother in California made
this for me and it really tastes
great! Best when eaten right
after it has been prepared. The

Baked Spaghetti is Billy’s
:, ana it is great for com-
pany. Amy relates that her
grandpa ( Frank Zimmer) loves
her Mexican Com bread with
pinto beans, fresh tomatoes,
onions and home made hot
sauce, and she says that her
Pineapple Chess Coconut Pie is
quick, easy, and everyone loves
it. We hope you will too.
Grandma Quindt’s
Broccoli and Bacon
Salad
1 bunch broccoli cut into
florettes
1 bunch green onions,
sliced
1 bunch radishes, sliced
1 ib. bacon, fried crisp and
crumbled or Bacos
1 c. raisins
Dressing:
1 c. mayonnaise
1/4 c. sugar
2 tbsp. vinegar
Toss broccoli, onion, radishes
and raisins. Mix dressing and
chill 30 minutes. Toss in bacon
before serving.
Baked Spaghetti
1 pkg. long spaghetti
1 (8oz.)Pkg. American cheese,
sliced
1 Ib. grated sharp cheese
1 can parmesan cheese
'h stick butter
1 tsp. onion salt,
1 »tsp., garlic salt
Salt and pepper to taste
1 can whole tomatoes
2 cans tomato sauce
Cook spaghetti as usual. But-
ter pan. Make layers of all ingre-
dients in order except whole
tsp. chili powder
Chopped jalapenos (optional)
Grated Cheddar cheese.
Prepare commuffin mix as
directed. Add cream style com.
Place half of mixture in a heal-
ed cast iron skillet coated with
oil. Layer ground round, onions,
bell pepper and jalapeno’s.
Sprinkle garlic salt, chili pow-
der & grated cheese, then pour
remaining commuffin mix on
top. Bake according to box
directions.
Pineapple Chess
Coconut Pie
1 stick butter
13/< c. sugar
1 tbsp. commeal
4 eggs
8y« oz. crashed pineapple
372 oz. shredded coconut
Melt butter & beat in sugar &
eggs. Mix in remaining ingredi-
ents. Pour mixture into 9-inch
unbaked pie shell. Bake for 10
min. in preheated 450° oven;
reduce heal to 35ff& bake for
30-40 min., until firm.

Services Mary
J. South
Mary J. South, 70, of Lone
Oak, Texas died Sunday, Sep-
tember 1, 1996, at Parichaven
Nursing Home after a long ill-
ness. Services were held at 2
p.m. Wednesday, September 4,
at the Lone Oak Baptist Church
with Robert Cook officiating
assisted by Rev. Frank Khuf
Burial was in the Prairie Valley
Cemetery.
The daughter of Edgar and
Maine French Jones, she was
bom Feb. 19, 1926, in Topeka,
Kansas. She married, Luther
South on Aug. 25, 1970, in
Minnesota. She was a member
of the Lone Oak Baptist
Church; a member of the Order
of the Eastern Star in Quinlan;
election judge for county, state,
school and city in Hunt Coun-
ty; and was in charge of State
Food Distribution in Lone Oak.
She is survived by her hus-
band; sons, Kenneth South of
Sulphur Springs, and Rex West
of Clarkville, Indiana; daugh-
ters, Shirley Covington of Sher-
man, Karen Bircher of Clark-
ston, Washington, and Diane
Meyers of Lewiston, Indiana;
brothers, Don Jones of Spo-
kane, Washington, Jim Jones of
Cheyenne, Wyoming, and
Richard Jones of Valrico, Flori-
da; sisters, Donna Hess of
Payette, Indiana, and Shirley
Hausladen of Grangeville, Indi-
ana; 11 grandchildren and two
great-grandchildren.
She was preceded in death by
two brothers, Van and Bill
Jones.
Pallbearers were Bobby Fan-
nin, Jimmy Fortenberry, Rubert
Land, Larry Miller, Charles
Moore and William Scudder
Bartley Funeral Home of
Lone Oak was in charge of
arrangements.

The 27th Annual Hopkins
County Fall Festival in Sulphur
