Elaine Bounds, a relative new-
comer to the county, is our featured
cook this week. Elaine was bom in
Mexia, raised her children in Hous-
ton, and moved from the Dallas area
five months ago to Emory. A wi-
dow, she lives with her daughter
and son-in-law Georgia and Don
Shelby, and their two children, six-
year-old Kathryn and three-year-old
Beau. She says she loves the coun-
try, the water that surrounds Rains
County, and the people here.
Georgia and Don are owners of
Don’s Restaurant, and have “put her
to work” helping them out half a
day at the restaurant and then she
goes home to be “Maw Maw” the
rest of the day.
Before coming to Emory, Elaine
worked as a receptionist at the Pres-
tonwood J.C. Penney Beauty Salon
until it changed locations. She also
had the privilege of attending
Brookhaven College in Dallas, and
says it was a wonderful experience,
stating, “It was fun going to school
after all these years.”
Living with her children and
grandchildren, Elaine also gets to
enjoy the family pets, a pomeranian
named Ginger and a beta fish
named Blue Eyes.
Elaine also has two sons; Gary
Morton lives in Dallas and works at
Bank One, and Steve Morton of
Groesbeck works for the Limestone
County Sheriff’s Department.
When Elaine is not working on
Sunday morning, she and her
grandchildren attend Emory Metho-
dist Church.
When asked what she enjoys
most she says, “Reading, gardening
that I am sharing with grandchil-
dren, cooking, fishing, sports, good
movies, travel, and watching my
grandbabies grow.”
Elaine has lived in quite a few
places and loves a new experience.
She has made a lot of changes
through her past jobs. She has a
friend that teaches school in Aruba,
and once spent two months there.
She says it was quite an experience.
When it comes to cooking, Elaine
says that Don is the cook and she is
the helper. She does the salad bar
and desserts, and loves to make

Elaine's American-Style
Fried Rice
4-6 c. cooked rice
71 c. chopped bell pepper
'A c. chopped celery
7i c. chopped green onions
Vi c. sliced mushrooms
3 eggs, beaten
4-5 boned chicken breasts
1 can fancy Chinese veggies
fine ground pepper
margarine
chicken broth
soy sauce
Saute chicken in margarine until done,
remove. Scramble eggs in margarine. Put
rice, bell pepper, celery onions, mush-
rooms, veggies & chicken into eggs & stir
for a few minutes. Pour enough oroth to
moisten & hold rice mixture together. Too
much, & it will be soupy. Add soy sauce &
pepper to taste. Serve with egg rolls.
Old-Fashioned Pound Cake
7» lb (2 sticks) real butter
2 c. sugar
5 whole eggs
2 Tbsp. lemon juice
1 tsp. vanilla
2 c. flour
dash of salt
Cream butter & sugar. Add eggs, one at
a time, then lemon & vanilla. Beat well.
Add sifted flour & salt. Grease & flour
bundt pan. Bake at 325° for 1 hour & 15

Her family’s favorite recipes
include chicken pot pie, Monkey
Bread, pecan pie, and her special
fried rice. She likes variety in foods,
so she really can do some of every-
thing. She says, “I am not a gour-
met, I love plain ol’ food. 1 really
enjoy seeing people eat what I pre-
pare.”
We are including some of
Elaine’s favorites for our readers to
try. Enjoy!
Holiday Salmon Ball
1 lb. can (2 c.) red salmon
1 8-oz. pkg, cream cheese
1 Tbsp. lemon juice
2 tsp. onion (finely minced)
1 tsp. prepared horseradish
7i tsp. salt
7* tsp. liquid smoke
Drain, clean & flake salmon Combine
with all other ingredients. Chill several
hours.
Mix:
7j c. fine chopped pecans
3 ‘ Tbsp. driea parsley
Roll salmon mixture into ball & into
parsley mix. Serve with party crackers.
Sauer Kraut Salad
1 lb. sauer kraut, washed & drained
7i c. chopped celery
7> c chopped green onion
7: c. chopped green pepper
2-4 Tbsp. Wesson Oil
7a c. vinegar
1 c. sugar
1 sm. bottle pimento, drained
Mix oil, vinegar & sugar & heat. Pour
over vegetable mix. Cover & let stand for
24 hours. If too oily, cut back to 2 Tbsp
Honey Marmalade
Monkey Bread
2 Tbsp. margarine or butter melted
7« c. cnopped nuts
*/j c. orange marmalade or any flavor
jam or preserve
7a c. honey
2 75-oz cans refrigerated biscuits
Heat oven to 375° Grease 9- or 10-inch
tube or bundt pan In small bowl combine
nuts, marmalade, honey & margarine
Separate biscuits, cut cch into quarters
Place half of biscuits in pan, spoon half of
marmalade mix over biscuits Repeat with
remaining biscuits & marmalade mixture.
Bake approx. 20-30 minutes until deep
golden nrown. Invert on serving plate To
serve, simply pull apart. Serve warm for
breakfast

TOPS TX 1244, Emory, met
Monday, Nov. 3, 1997. Leader Jean
Ann Sillers called the meeting to
order. Heather Sherridan brought
the devotional. Everyone said the
TOPS and KOPS pledge. Linda
Franklin, weight recorder, called
roll witli nine members weighing in
with a good weight loss.
TOPS best loser was Bonnie
Mays, and KOPS best loser was
Johnnie Dry.
Bonnie Mays won the money can
contest. Johnnie Dry won the SRD
contest. The prize was a pair of
Christmas pillows. The new SRD
contest starts next week and will
run two months. A drawing will be
held for a lovely afghan donated by
Johnnie Dry.
Charms were passed out to mem-
bers that gave a program in Sep-
tember and October. They were
Lori Wilson, Margaret Mierzwik,
Linda Franklin and Jean Ann
Sillers.
Jean Ann brought a good pro-
gram on “Control Our Holiday Eat-
ing Habits."
TOPS club meets each Tuesday
at 7:00 p.m. at the Rose Community
Center. Everyone is welcome.
Lone Oak TOPS
TOPS TX 1410, Lone Oak, met
Nov. 3, 1997, at 5:30 p.m. We said
our TOPS pledge and sang our fel-
lowship song. Joyce Hiser called
the meeting to order. Bonnie
Mathews called the roll with eight
members present. Our club had a
loss of four pounds.
TOPS loser of the week was
Dorothy Poole with a loss of 2-1/2
pounds, and she received a gift.
Our money can was carried over.
This was dues and treasurer’s
report night.
We are having our low-fat
Thanksgiving dinner on Nov. 24.
We also are having a “white ele-
phant” sale, and everyone is bring-
ing a Christmas item.
Our meeting adjourned at 6:30
p.m.

B.D. Crump was a recent visitor
in the office to renew his subscrip-
tion to the Rains County Leader.
Clara Greathouse is 84 years old.
She was bom in Rains County in
1913 in the Prospect community.
Her parents were Van and Bessie
Prather. They were farmers.
Clara went to the Waskom
School. Her teacher was Polly
King.
She was 24 years old and never
intended to get manned, until Bob
Greathouse came along. He was a
little older and from Van Zandt
County. This helped turn Clara’s
head. They were married and lived
happily until Bob passed away in
1970 from a heart attack.
In 1942 they moved to California
to work in a defense plant during
World War II. They worked around
the Los Angeles area for 13 years
and enjoyed it very much.
The Greathouses retired and
returned to Emory in 1955. They
had one daughter, Cindy, who was
bom after they returned to Emory.
Cindy now lives in Point where
she was owner of (Creative Krea-
tions for eight years. Her husband,
Don Roberts, runs the Point Tire
Shop.
Clara feels right at home in Green
Acres. Her roommate is Lota Dal-
ton. She named a few of the people
who live here in Green Acres with
her as her long-time friends,
Gertrude Hughey, Dovie Taylor,
Mr. Wheatley, Leo Adams and Mr.
Cooke.
Clara likes to visit. Stop by and
say hello.
