Marsha Potts has been selected as
our featured cook this week, and is
sharing some of her life and recipes
with us for your enjoyment.
Marsha was born and raised in
the Miller Grove community and
lived there for the first 19 years of
her li fc She mnvp j. tn South TsXuf}
for three years, then to Longview
for 14 years, and returned to Miller
Grove in 1986. She says that after
living in big cities she finds there is
nothing like the good, friendly
Christian neighbors of Miller
Grove, where she attends County
Line Baptist Church and keeps the
nursery for Sunday school.
Marsha has three children. One
son, Bradley and his wife Sue live
in Tyler, and have one son, Taylor.
Bryan and his wife Krista have one
son, Wesley, and live about six
miles from Marsha. Her daughter
and son-in-law, Lori and Scott
McCullough, live in Greenville and
are expecting their first child in
October. Marsha says, “I have
found that being a grandmother is
one of God’s richest blessings.”
Marsha is the daughter of Paul
and June Garmon. Most everyone
in and around Rams and Hopkins
counties have heard her and her
family sing afone time or the other,
as they have sung Southern Gospel
music as a family for many years.
Marsha is supervisor of consum-
er accounting for Farmers Electric
Cooperative, and has worked there
for the past nine years.
Marsha told me, "My Grand-
mother Garmon was known as ‘the
best cook around’. She always
made homemade biscuits and yeast
rolls and the best apple pies ever.
She is dearly missed by all."
As you can see in Marsha’s pic-
ture, her grandson Wesley is a big
helper in her kitchen. She says, “He
always helps to bake cakes and
cookies and when he spends the
night with ‘Nana,’ he wants to make
muffins for breakfast the next
morning. Wesley is three years old
and attends Discovery School in
Greenville.
Marsha tells me that her Red
Velvet Cake is her daughter’s
favorite birthday cake and she
makes it for her almost every
February 12th. It stays moist and
fresh for days because of the milk
and sugar mixture poured over it
after it is baked.

Layered Black Bean and
Rice Pie
12 flour tortillas
1 lg. sliced tomato
1 - - 8-oz. pkg. Mahatma black beans-
& rice
1 4-oz. pkg. cream cheese
1 lg. onion, chopped & divided
1 lg. avocado, sliced & divided
4 tbsp. cilantro, divided
4 c. diced ham
2 c. shredded Cheddar cheese,
divided
sour cream
Preheat oven to 350°. Prepare black
beans & rice according to pkg; fold in
cream cheese. In a 9x12 baking dish
place 6 flour tortillas, overlapping
edges. Spread half of black beans &
rice mixture on tortillas. Sprinkle
chopped tomatoes, onions & avocados.
Sprinkle witli chopped ham and top
with 1 cup Cheddar cheese. Repeal
layers beginning with tortillas. Bake at
350° for 20 min. or until cheese is
bubbly. Cut in wedges & serve with
sour cream. Very good.
Summer Sausage
2 lbs. lean ground beef
'/< tsp. salt
'/« tsp. garlic powder
1 tbsp whole mustard seed
1 tbsp. Liquid Smoke
'/< tsp. blk. pepper
2 tbsp. Morton Tender Quick
V* c. water
Mix all above ingredients together
well. (Hint: put water in bowl with sea-
sonings first & mix well, then add
ground beef.)
Make three rolls about 2 inches in
diameter. Sprinkle with coarse black
pepper. Wrap lightly in foil & refriger-
ate for 24 hours. Remove foil & bake
on a wire rack with a pan underneath
for 1 hour at 350°. Slice & serve with
cheese, crackers & parly bread Can
also be made with ground deer meal.
Cranberry Chicken
6 chicken breasts
1 can whole cranberries
1 bottle French dressing
1 pkg onion soup mix
Mix cranberries, dressing & soup
mix together & pour over chicken
breasts & bake uncovered In oven for
45 min. at 350° Serve on a bed of
rice a'ang with a tossed salad & you
have a full meal
Red Velvet Cake
2 c. Hour
1 tsp. baking powder
1 tsp. salt
1 tsp cocoa
7« c Crisco oil
1'/? c sugar
2 eggs
1 oz rod food coloring
1 c buttermilk
1 tsp baking soda
1 tsp vinegar
•/, t milk
'/« c sugar
Sift flour, baking powder, salt &
cocoa in large mixing bowl In se()a-
rale bowl beat eggs. Crisco oil & 1 '/i
c sugar & add to flour mixture Add
(caking soda & vinegar to buttermilk &
gradually stir into Icowl with other
ingredients Pour into 2 greased &
floured 9" cake pans & bake at 350°
for 25-30 min Boil '/«c. milk & '/? c.
sugar, then pour over cake immediate-
ly after removing from oven Let cool
then frost with cream cheese icing.

'/i c. butler
1 tsp. vanilla
V* c. fluked coconut!
1 lb. pkg. confectioners sugar
Mix all together really well & frost
cake. Take y? c. coconut & add 4-5
drops of red food coloring & sprinkle
on lop of cake.

Emory, has earned a Golden Cone
award for the fiscal year i996.
“We are proud of the hard work
and dedication of the owners, man-
agers and staff at the Emory Dairy
Queen, ” says Watson. “Their desire
to make the store a top performer is
a credit to them. Recognizing them
with this is a way of saying ‘thank
you’ for making the Dairy Queen
system a leader in the fast-food
industry.”
Awards are presented annually to
the top Dairy Queen stores in the
country and include DQ Soft Serve
awards, Queen’s Choice Premium
Hard Ice Cream awards, DQ Yogurt
awards, Full Brazier awards and
Limited Brazier awards.
The DQ Soft Serve awards
include the Golden Cone award,
given to stores reaching a 1,000-
gallon soft-serve increase over the
previous year, and the Silver Cone
award given to stores reaching a
500-gallon increase.
The Queen's Choice Premium
Hard Ice Cream awards include the
Golden Scoop award, given to
stores reaching a 200-gallon
Queen s Choice ice cream increase
over the previous year, and the Sil-
ver Scoop award given to stores
reaching a 100-gallon increase.
The DQ Yogurt awards include
the golden yogurt award, presented
to stores reaching a 200-gallon
yogurt increase over the previous
year, and the Silver Yogurt award,
honoring stores with a 100-gallon
increase.
The full Brazier awards include
the Golden Brazier award, recog-
nizing stores generating a 20-per-
cent increase in the amount of ham-

our TOPS pledge and sang our fel-
lowship song. Joyce Hiser called
the meeting to order. Jean Burns
called roll with six members pres-
ent. Our club had a loss of 2-1/4
pounds.
TOPS loser of the week was
Bobbye Chester with a loss of 1-3/4
pounds, and she received the fruit
basket. Bobbye also won $3.5Q
from the money can drawing. Our
club had a loss of 17-1/2 pounds in
April.
Joyce spoke on “Health and Cho-
lesterol.” Our new team weight-loss
contest starts May 5, 1997.
Our meetings are Monday nights
from 5:30-6:30 p.m. at Lone Oak
Methodist Church annex.
Visitors are invited.

We did not have a program this
week due to a discussion of chapter
activities.
Everyone is invited to our pro-
gram next week, May 6, when we
will present a style show titled,
“Being Our Best on the Way to
Success.’ The show will begin at
7:00.
We meet each week in the Rose
