Prior to interviewing featured
guests in this column. I send
then, a one-page biographical
sheet, which has a few pertinent
questions they may answer
before we meet. One question is
the following: “What do you do
for relaxation?” Sandra Parker
left that line blank.
Sandra smiled as she acknowl
edged that the omission wasn't
an accident. “I'm not good at
relaxing. People talk about re-
tirement, but I don't think I'll
ever want to. I need people and
am sort of hyperactive," she said.
The busy lady went on to say
that while watching television,
she’s up and about doing things
during the commercials. I con-
fessed that I don’t watch TV
commercials either, but I don’t
get up and do anything worth
while; I use the mute button on
the remote so I don’! have to lis-
ten to them When it comes to
Sandra, she probably docs some-
thing productive; I just snooze in
my recliner Advertisers are
really wasting their money on us.
However, there was no waste
around Sandra's home as a child.
Parents F.T. and Betty Jenke
were frugal and hardworking
Her dad, who is now deceased,
was full blood German and a
minister. Sandra said, “He was a
brilliant man who did woodwork

made it.”
Sandra remembers a happy
childhood growing up in Rowlett
with two brothers. She always
wanted a sister, and when she
was 15 and her brothers were 12
and IK, that dream came true.
Baby sister came along so late
that Mom and Dad let the three
children choose her name; they
chose “Dorcas,” which comes
from the Bible. The two sisters
arc now close friends.
Mom still lives in Rowlett and
passed along a strong work ethic
to her daughter. Sandra said her
mother retired once but now

all, she’s only 73 years old, and
in the family tradition, that’s way
too early to retire.
The mother also passed along
some good advice to the daugh-
ter. Sandra is married to Pastor
Montic Parker of f irst Assembly
of Clod Church in Emory; she is
also secretary to Superintendent
David Scago of Rains ISD.
Because her mother was married
to a minister. Mom stressed the

importance of maintaining “con-
fidentiality" as a crucial element
of being a minister’s wife. The
need for confidentiality also is
vital in terms of being secretary
to the area’s school superinten-
dent. Sandra believes there arc
similarities in the two positions
she holds, and she follows her
mother’s advice.
Praise wits heaped on Super-
intendent Scago by his faithful
employee. "He is a wondt/ful
boss who lets me do my job. He
doesn’t stand over me, and I
appreciate that," the secretary
said. She went on to say that he
is a very patient and kind man.
Meanwhile, we discussed San-
dra’s love of baking. She espe-
cially enjoys making desserts
and breads, and I asked her how
in the world she kept from gain-
ing weight. Her answer was,
“The family accuses me of not
eating my own cooking. I just
enjoy eating ‘healthy.’” What
willpower!
Then she presented me with a
wonderful homemade coffee
cake she made earlier with yeast,
almonds, cinnamon and all sorts
of wonderful things. I took it
straight to the l eader office. The
gift was timely because it was
Tuesday morning, and that is the
day after which most of the
Leader staff has spent half the
previous night putting the paper
together and getting it to the

ings; that coffee cake was a hit
and just the “upper" everyone
needed!
Sandra appears to be an “up”
person to me. She has a wonder-
ful job in a wonderful school
system. Her marriage to Montie
is on solid ground, and the cou-
ple has two successful children,
I ana and Montie Jr. Every time I
sec her, she looks as if she just
stepped off the cover of a fashion
magazine. Oh, to have that flair
for kxiking as good as she does!
Of course, her office is neat as
a pin, and Sandra is pictured
standing beside a beautiful
wreath she made. Wonder if she
can whip out a wreath during a
commercial break? She said she
enjoys making floral arrange-
ments and doing other crafts.
No wonder Sandra left that
line blank on the questionnaire:
She’s the wife of a minister, sec-
retary to the school superinten-
dent, makes breads and desserts
for family and friends; looks like
a million bucks; decorates her
office; does all sorts of crafts.
Busy, busy, busy! No wonder she
doesn’t relax; there’s no time.
Good TV Easy Pizza
(Makes turn to three /0-inch pizzas)
Dough (mix well and knead
slightly):
I pkg. dry yeast
I c water (I05°-115°)
I tsp sugar
1 tsp salt
2 Tbs oil
2-1/2 c flour
Roll dough thin Press into greased
pans that have been sprinkled with
commcal Bake at 425° until slightly
dry
Sauce (mix well and spread on par-
tially baked crust):
2-3 cans tomato sauce
1/2 c chopped onion
1/4 tsp hack pepper
1/4 tsp garlic powder
i/4 Lsp salt
2 tsp oregano or Italian season-
ing
Topping! (as desired)
Mozzarella and Parmesan cheese;
pepperoni, mushrooms, bell pepper,
black olives, hamburger (cooked),
bacon, sausage, etc
Bake at 425° until done (approxi-
niateh 20 25 minutes)
Tuna Mold
Melt in saucepan over low heat (or
low setting on microwave:
8 ozs. cream cheese
2 envelopes plain gelatin
1 can tomato soup
Add:
2 cans tuna drained
1 c. mayonnaise (regular or fat-
free)
1/2 c. celery, chopped
1/2 c. bell pepper, chopped
1/2 c. onion, chopped
Mix all well and refrigerate several
hours in well-greased mold or bowl
Serve on bed of lettuce with crackers.
Marinated Vegetable
Salad
Chop
1 c. onion
I c. bell pepper
I c. celery
I jar pimentos
Add:
3-4 cans black-eyed peas, drained
1 tsp. salt
1 tsp. black pepper
garlic powder, optional
Heat to boiling then add to ingredi-
ents above:
1/3 c. white vinegar
1/4 c. water
1 c. sugar
Refrigerate at least overnight. Keeps
well for several days.
Other options: Instead of black-eyed
peas, other vegetables may be used,
such as beans, sauerkraut, etc. or a
mixture of vegetables
Copper Pennies
2 lbs carrots, scraped and sliced
1 bell pepper, chopped
I onion, chopped
1 can tomato soup
1/2 c. oil
1 c. sugar
3/4 c. vinegar
I Tbs. mustard
1 Tbs Worcestershire sauce
Boil carrots in salted water until
tender but still crisp Drain and cool.
Mix tomato soup, oil, sugar, vinegar,
mustard, and Worcestershire sauce.
Pour over carrots, bell pepper and
onion Refrigerate and chill overnight
Will keep for several days
White Mountain Cake
1/2 c. butter
2 c. sugar
2-1/2 c. flour
2-1/2 tsp baking powder
1/2 tsp salt
1/2 c. milk
8 egg whites, stiffly beaten
1 tsp. vanilla
grated coconut (at least 3 cups)
Cream butter Gradually add sugar,
beating well Combine dry ingredients
and add alternately with milk Fold in
stiffly beaten egg whites Pour into
three greased and floured 9-inch pans
Bake at 375° for about 20-30 minutes,
until tests done Spread with frosting
between layers, and sprinkle each
layer with grated coconut
Frosting:
2-1/4 c. sugar
3 egg whites
2 Tbsp white corn syrup
I dash salt
1/2 c. cold water
1-1/2 tsp vanilla
Combine sugar, egg whites, syrup,
water and salt in top of large double
boiler Place over boiling water, beating
constantly on high speed, approxi-
mately 7-10 minutes, or until stiff
peaks form Add vanilla and beat two
minutes until thick enough to spread
TOPS TX 1244
TOPS TX 1244 met in regular
session on May 25. The meeting
was called to order by leader
Betty Gothard. The devotional
was given by Lori Wilson.
We all said the TOPS pledge
and sang the TOPS song. KOPS
said the KOPS pledge.
Linda Franklin called roll with
seven weighing in. Mildred
Broiles was TOPS best loser.
Lori Wilson won the money can.
Lori Wilson read the minutes.
We started a contest called
Fourth of July Sparkles. Rules
for the contest are (1) phone two
friends each week; (2) send one
card of encouragement each
week; (3) lose or turtle; (4) exer-
cise or walk three time each
week; (5) drink 36 ounces of
water per day; and (6) keep a
food chart.
We worked on posters for the
open house picnic.
TOPS open house picnic is
this Saturday, June 7, from 10:00
a.m. to 2:00 p.m. at the Emory
City Park. Come out and join the
fun. Sec what TOPS can do for
you.
Don’t forget to send your
secret pal a card or note to let
them know you’re thinking about
them.
We closed with our Helping
Hands pledge and sang the
Goodnight song.
