MISS CINDERFELLOW DUBLIN - There were 12 contest-
ants for the dubious title of Miss Cinderfellow in a fund raiser
fun time for the DHS junior class Monday night. The winner
was Preston "Precious" Keilers, escorted by Karin "Kirby The
Man" Nabors. Teachers got in on the entertainment, giving
their own rendition of the Village People's YMCA. In second
picture below, parents served up genuine Mexican food as
part of the fund raiser.

for certain if Cinderfellow
candidates were trying to set
fashion trends and/or behav-
ior patterns but what some
did was wildly popular with
the large crowd Monday. At
left is Callen "Captivitating
Callie" Miller, second runner-
up; Above is Scott (Sassy

and 1st runner-up) and
Bubba (Bustful Bubblina)

Lovelace entertained the
crowd with patriotic music

first peanut processing plant in
Blakely. The Dublin plant was
the second facility opened by
Universal Blanchers. In
October 1999, Universal
Blanchers was purchased by the
current owners. Universal
Blanchers I.LC. Since then, a
plant has opened in every major
U S. peanut growing region,
including a raw peanut cleaning
operation in Blakely and a full
roasting and peanut butter ingre-
dient plant in Edenton, North
Carolina.
The Dublin facility dry
blanches about 52 million
pounds of peanuts a year,
according to Jackie Gailey of
Universal Blanchers. That’s
about one million a week. Most
of the peanuts, including
Spanish. Runner, and Virginia
peanuts, come from Golden
Peanut Company in Dc Leon
and Birdsong Peanuts in
Gorman. Universal Blanchers
is the largest of all U.S. blanch-
ing operations, blanching more
than 300 million pounds of
peanuts a year.
"Start to finish, (blanching)
is an eight hour ordeal," said
Gailey.

blanching reduces the shelf life
id peanuts. According to a

(Research Center, blanching has
no affect on peanut shelf life.
After heating peanuts to three
different temperatures and three
different heating times, peanuts
from each protocol were stored
for 28 weeks at 30°C. All pro-
tocols had the same storage abil-
ity as unbalanced control sam-
ples.
The Dublin plant dry roasts
peanuts as well. Dry roasting
can be done in batch roasters or
continuous roasters. Batch
roasters are natural gas tired
revolving drum ovens, which
continuously stirs the peanuts.

the peanuts is raised to approxi

60 minutes.
Universal Blanchers uses the
continuous process. Peanuts are
ran through on continuous belt
roasters. Continuous roasters
reduce labor, ensures a steady
flow of peanuts for other
processes and decreases
spillage. Peanuts are moved
through an oven on a conveyor
or by gravity leed. In one type
of roaster, peanuts are fed by a
conveyor into a stream of coun-
tercurrent hot air that roasts the
peanuts. Peanuts are then agi-
tated to ensure that air passes
around the individual kernels to
promote an even roast.
According to Gailey, it is
basically the same process as
roasting peanuts in your kitchen
oven. 'ITiese high tech roasters
provide the ultimate in color
control and damage reduction.
Both the Dublin and Edenton.
NC plants use powerful pre-
cleaning equipment and highly
sensitive color and density
channel sorters after roasting to
assure quality.
Cooling then occurs in cool-
ing boxes or on conveyors
where large quantities of air are
blown over the peanuts immedi-
ately following the roasting
process. This is necessary in
order to stop the roasting
process and maintain uniform
quality
Alter the peanuts are done
roasting, they are packaged.
Peanuts are 'put info nitrogen
flushed packages and then
sealed to preserve their fresh-
ness. The packages include a
2,000-pound tote hag, a 2,000-
potind box, or .30 or 50 pound
boxes.
Universal peanut company
sends most of their peanuts to
the Hershey Company. These
blanched and roasted peanuts go
into Pay Day and Mr. Goodbar
candy bars.
