The state of Pennsylvania is
an important research site for
genealogists. Pennsylvania has
one of the most varied popula-
tion patterns of all the states.
The Dutch settled here first, in
the 1620’s. Swedes and Finns
came to southeastern Pennsyl-
vania in the 1640’s. English
Quakers arrived with William
Penn in 1682. They came seek-
ing a religious and political
haven.
Germans began arriving in
1663. Religious sects among
the German settlers included
The Texas Senior Advocacy
Coalition and groups from all
over the state of Texas are or-
ganizing Senior Day at the
Capitol with the theme, “Se-
niors—the Heart of Texas.”
Senior Day was Feb. 4, 2003,
and it was an opportunity to
celebrate the contributions
older adults have made and will
continue to make to the state of
Texas.
After the rally, attendees
had lunch on their own and vis-
ited with their elected officials
on issues they are concerned
the Amish and the Mennonites.
The Pennsylvania Dutch con-
tributed some of America’s fin-
est folk art, including furniture
and tinware.
Pennsylvania’s famous his-
toric shrines include
Washington’s Camp Ground at
Valley Forge, the Gettysburg
Battlefield, and Independence
Hall and the Liberty Bell in
Philadelphia.
These are the people and
events reported in the Timpson
Weekly Times not so long ago.

about. It was hoped that the em-
phasis will be on programs and
funding of programs for older
adults. Senior Day also had an
exhibit in the Lower Rotunda
of the Capitol. The display in-
cluded tributes to the outstand-
ing contributions older Texans
have made to our state’s devel-
opment.
This was an exciting day for
the seniors of Texas. It proved
to the state legislators that se-
niors care and are involved in
the issues affecting them.

Seniors “The Heart of Texas”
Round My Table By Marilyn Corder
I had a really nice visit with Pegi Corcorran last week. If you have not met this lady, you need to do so. Pegi is very energetic
and talented lady. She is very crafty and I’m trying to talk her into holding classes. Pegi had helped us with the reception after
our Christmas parade this past year, and she brought one thing, a Cinnamon Coffee Cake, made into loaves that was a real hit.
I have asked her to share this recipe with me and also with you. She was gracious enough to do so and also many other she likes
and uses often.
1/2 c. butter or margarine
2 eggs, beaten
1 tsp. vanilla
1 tsp. baking powder
1/2 tsp. salt
CINNAMON COFFEE CAKE
1 c. sugar
1 c. sour cream
1 tsp. soda
2 c. flour
FILLING
2/3 c. light brown sugar
2 T. melted margarine
1 T. Cinnamon
1 c. chopped walnuts
Cream butter and sugar until light and fluffy. Add eggs, sour cream, and vanilla; mix well. Sift together flour, baking powder,
soda, and salt. Stir dry ingredients into creamed mixture. Blend well. Spoon 1/2 mixture into greased 9 inch square pan or can
use loaf pan. sprinkle on half of the filling. Spoon remaining batter over this and then spoon on rest of filling on top. Bake at
350 degrees for 40-45 minutes or until test done.
FILLING: Mix together brown sugar and cinnamon. Stir in butter and nuts if desired.
Note: Instead of making your batter later, try using a pound cake mix.
Note: Can use 1 (8 oz.) pkg. cream cheese blended with 1/2 can strawberry pie filling as filling instead of brown sugar and
cinnamon.
ORANGE WHIPPED SWEET POTATOES
3 lbs. swt potatoes, peeled, cubed
2-2/3 c. orange juice, divided
1/4 c. packed brown sugar
2 T. margarine
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. ginger
Place potatoes and 2-1/3 c orange juice in a pot. Cover and
cook until tender, about 35-45 minutes. Drain, place in a large
bowl. Mash with brown sugar, butter, salt, nutmeg, ginger and
remaining orange juice. Yield: 6-8 servings.
