Catering to brides for twelve years

If you’ve ever been to a wedding reception, you know
that the taste of the wedding cake is overshadowed by
the decoration. In an event replete with ceremony,
splendor and majesty take top priority.
But caterer Biddie Johnson insists on both. In fact,
when she first began decorating weddings professionally
15 years ago, it was at the urging of friends who thought
she was good with cakes, both in the cooking and in the
decoration.
Now, in the name of Livingston Caterers, she does
everything else as well: decoration of the church, setting
up the reception, the finger foods and canapes and, of
course, her specialty, the wedding cake.
They may be patterned from a catalog book from
which the bride chooses, or Biddie may create her own
design for this very important occasion. Pleasing the
bride is her aim. Weddings were made for brides.
“The poor groom, he always just goes along for the
ride,” she said.
She goes over every detail with the bride to determine
exactly what she wants, said Biddie. “I do weddings like
they want it,” she said, although it is also part of her job
to make suggestions. Not everyone knows what they
want.
But some know exactly. The bride’s desires may vary
from specific color themes and type of cake and foods to
special things she may not prefer.
“I don’t want any birds,” one bride told her.
But decorations are sometimes an element in the
flowers. She is an old hand with flowers also, having
been to school for flower arranging and having owned
and operated a flower shop for several years before she
retired the first time. (She retired three times before go-
ing into the catering business. She couldn’t stand the
boredom of retirement.)
Of course, flowers are a large element of her handling
of the wedding. Using only silk flowers, she takes care of
flowers for the bride and bridal party, boutonnieres, cor-
sages and decorations for the ceremony, reception and
rehearsal dinner.
How the decoration is handled will also vary with the
size of the church. Of couj^e she tries to coordinate the
colors to enhance the entire ceremony. The style and col-
or of the bride’s ensemble is also considered. If the wed-
ding takes place in a small church, the decoration should
be kept within bouhds, “but it still should be pretty.”
Biddie may handle all elements of the wedding or do
only parts of it, however the bride wants to handle it.
Right now, said Biddie, the stairway cake is very
popular. And although there may be requests for
chocolate and other flavored cakes, the white cake is the
very-favorite at both weddings and parties, which she
also caters.
She may have gone to school to learn about flowers,
but not cakes. That is something that came to her
naturally. Any cook who has ever wondered why their
creation came out somewhat uneven if not downright
lumpy will marvel at how perfectly smooth her cakes
turn out. That’s both layer cakes and sheet cakes.
“I can’t turn a cake loose if it’s not smooth,” said Bid-
die.
She caters about one event a week, including wed-
dings, showers, Christmas parties and birthday parties,
providing both decoration and food. And whether the
decorations on cakes are commercially supplied or her
own creation, you can be assured of a unique work of art.
As mentioned before, Biddie owned and ran a flower
shop for years. That was in New Caney where she also
had a grocery and feed and hardware store, a barber
shop, a beauty shop and a cafe in back of the store.
“I liked to work myshelf to death!” she said.
Finally she sold out a year before her husband retired
from Brown Express, which was in 1970, and moved to
Coldspring. When she was tired of doing nothing, she
rented a flower shop for a year and worked several
places until they moved here 12 years ago. That was

niversary last month.
Biddie enjoys her work and says she gets very involv-
ed with the weddings. “I get real attached to my
brides,” she said. “1 feel like I’ve made a lot of friends.”
