Honoring those who served
There were 180 wreaths placed in cemeteries in East Bernard, Hungerford, Wharton and El Campo on
Dec. 14 as part of the Wreaths Across America (WAA) project. Pictured are the seven ceremonial
wreaths at the Wharton County Veterans Memorial to remember the fallen, honor those
who served and who are serving and teach children the cost of freedom. The ceremonial
wreaths represemt all branches of the armed services and POWs and MIAs. They will be
on display through Jan. 3.
WCYF broiler order
deadline is Jan. 3
Any interested WCYF ex-
hibitor must order their broil-
ers by Friday, Jan. 3.
There is a minimum order
of 25 birds per exhibitor and
a maximum order of 50 birds
per exhibitor. A Broiler Entry
Form must be completed and
sent to the fair office on or
postmarked by the deadline
date.
Entry Cards are available
on the website at wharton-
countyyouthfair.org, and at
the fair office.
Payment must accompany
each order.

Fair Office holiday hours are:

Rice clinic set Jan. 15
The theme of the Western
Rice Belt Production Confer-
ence Consumers’ Program on
Wednesday, Jan. 15, at the El
Campo Civic Center will be
Rice, Rice & More Rice. This
program, sponsored by the
Texas A&M AgriLife Exten-
sion Service in Colorado, Jack-
son, Matagorda and Wharton
counties, will provide educa-
tion, entertainment and fun.
Attendees will watch com-
mittee members prepare
recipes showcasing rice. An
educational program will also
be presented. Registration
and refreshments will begin
at 8:30 a.m. and the program
will begin at 9 a.m.
The first 150 persons who
register will receive registra-
tion bags with rice recipes,
bags of rice and other educa-
tional materials; they will also
be eligible for numerous door
prizes that will be given out
throughout the morning.
Following the program, all
participants will be invited to
a catered luncheon. Persons
arriving after 9:30 a.m. will
not receive registration bags,
door prizes or luncheon tick-
ets. There is no fee, and reser-
vations are not necessary.
Any person who has a dis-
ability that may require an
accommodation to participate
in the conference is asked to
contact their local county ex-
tension office at 532-3310.

Banana and
Sweet Potato
Casserole
A healthy replacement for
the holiday candied yams, but
easy enough for any weeknight
dinner.
5 Bananas, skin should
have brown spots
5 Sweet potatoes, medi-
um size
1 C. butter
1/2 C. honey, brown
sugar or splenda brown
sugar
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 C. wheat flour
1 C. brown sugar
2 C. walnuts
Preheat oven to 350. Using
a fork, poke holes in sweet po-
tatoes and bake for 1 hour. Add
whole bananas in their skin
and bake an additional 15 min-
utes in the oven.
Once cooled peel and place
in mixer with sugar, butter,
salt, cinnamon and nutmeg.
Mix until smooth.

inch diameter
pre-greased
pan and set
aside.
Then in
same mixing
bowl add walnuts, wheat flour
and brown sugar and mix for
30 seconds.
Spread on top of casserole
and bake in oven at 350 for 20
to 30 minutes and serve. You
can make this casserole one
day before your event.
Twice Baked Yams
3 lbs. small sweet pota-
toes, unpeeled
1/2 C. golden raisins
1 Tblsp. light brown sug-
ar
1/4 tsp. ground cinnamon
1 (8 ozs.) can crushed
pineapple, drained
1 tsp. vanilla extract
2 Tblsp. chopped pecans
1 C. miniature marsh-
mallows
Heat oven to 400. Place po-
tatoes on a baking sheet and
cook for 1 hour or until tender.
Cool for 15 minutes. Cut a thin
slice off the top of each potato.
Carefully scoop pulp into
a bowl, leaving shells intact.
Mash pulp; stir in raisins,
brown sugar, cinnamon, pine-
apple and vanilla extract.
Spoon mixture into the shells

1/4 lb. shredded Mon-
terey jack cheese with
jalapeno peppers
2 Tblsp. chopped fresh
cilantro
1/2 C. sour cream
1 Tblsp. unsalted butter
1 Tblsp. vegetable oil
4 Turkey breast filets
In a small bowl, combine
cheese, chopped coriander and
sour cream. Set aside.
Melt butter and oil in a 10-
inch skillet over medium-high
heat. Brown turkey fillets 2 at a
time, about 5 minutes per side,
or until brown.
Transfer to broiler tray. Tbp
each fillet with a generous
spoonful of sour cream mix.
Broil 4 inches from heat about
2 minutes or until topping bub-
bles.
