Hill Country Recipes
Mix together:
2 large tomatoes, cut small
3-4 green onions, chpped,
including tops.
1 small can ripe olives,
chopped.
1 small can green chilies,
chopped.
1 tablespoon vegetable oil
1Vz tablespoon vinegar
1 teaspoon garlic salt
Serve with Fritos or tortilla
chips and enjoy.
MEXICAN RICE
Hill Country Recipes
In a heavy skillet place two
tablespoons shortening and
heat. Add one cup uncooked
rice and fry until dry look-
ing. Add one cup diced
onions, Vz cup diced green
peppers and continue frying
rice until is it golden brown.
Add one 8-oz. can tomato
sauce, 1 Vz cups water, one
teaspoon salt, a dash of red
pepper, a dash of celery
salt, and a dash of garlic
powder. Cover and let come
to a boil. Reduce heat and
cook again until rice begins
to fluff. Add Vz cups cold
water, let come to a boil
again. Turn off the heat.
BANANA BREAD

21/2 cups flour
21/4 teaspoons baking pwdr.
% teaspoon allspice
1/4 teaspoon salt
8 tablespoons sugar
4 ounces butter
1 tablespoon honey
1 cup white raising
4 medium sized ripe ban-
anas, mashed
2 eggs
juice of one lemon
Preheat oven to 350 de-
grees. Mix the flour, baking
powder, allspice, salt and
sugar in a bowl. Cut the
butter into small pieces and
add it and all the remaining
ingredients. Mix well with
an electric beater or by hand
and turn the mixture into a

Bake at 350 degrees for
one hour. Turn to 300
degrees and bake for an
additional 30 minutes. Re-
move from oven and allow
loaf to cook slightly before
turning on rack tocool.
Cut into slices and serve
with butter.
TINY PECAN PIES
Texas Hill Country View
Make the pastry using:
1-3 oz. pkg. cream cheese,
sofetend.
Vz cup oleo, softened.
1 cup sifted flour.
Cream cheese and oleo
together and add flour.
Refrigerate the mixture for
1 hour. Make 20-24 1-inch
round balls and press into
tiny muffin tins.
FILLING
1 egg.
% cup brown sugar.
1 tablespoon oleo.
1 teaspoon vanilla.
dash salt.
Va cup chopped pecans.
Mix all ingredients except
pecans. Sprinkle about half
of the pecans in the lined
muffin tins, fill with filling
dnd put the rest of the pecan
on top. Bake in a slow oven
at 325 degrees for 25 min-
utes.
