celebration of both.
Great for Fall
LOADED POTATO
CHICKEN CASSEROLE
2 lbs boneless, skinless
chicken breasts, cut into 1/2-inch
cubes
8-10 medium potatoes, cut
into 1/2-inch cubes (I leave the
skin on)
1/3 cup olive oil
1 1/2 tsp. salt
1 T. freshly ground pepper
1 T. paprika
2 T. garlic powder
6 T. hot sauce
Topping:
2 c. Fiesta Blend Cheese or
a mix of Cheddar & Monterey
Jack
1 c. crumbled bacon
1 c diced green onion
Preheat oven to 500° F. In a
large bowl mix together the olive
oil, salt, pepper, paprika, garlic
powder & hot sauce. Add the
cubed potatoes and stir to coat.
Carefully scoop the potatoes into
a cooking spray coated baking
dish, leaving behind as much of
the olive oil/hot sauce mix as
possible.
Bake the potatoes for 45-
50 minutes, stirring every 10-15
minutes, until cooked through
and crispy & browned on the
outside. While the potatoes are
cooking, add the cubed chicken
to the bowl with the leftover ol-
ive oil/hot sauce mix and stir to
coat.
Once the potatoes are fully
cooked, remove from the oven
and lower the oven temperature
to 400F. Top the cooked po-
tatoes with the raw marinated
chicken. In a bowl mix together
the cheese, bacon & green onion
and top the raw chicken with the
cheese mix.
Return the casserole to the
oven and bake for 15 minutes
or until the chicken is cooked
through and the topping is bub-
bly delicious. Serve with extra
hot sauce and/or ranch dressing.
CHICKEN SALAD
2 ( 12.5 oz) cans of chicken
(or 3 cups diced cooked chicken)
3/4 cup light mayonnaise
1 cup red grapes, halved
1 green onion, diced
1 stalk celery, diced
1/2 cup diced apple
salt and pepper to taste
pecans or cashews, optional
In a bowl, combine the
chicken, mayo, grapes, green on-
ion, celery, apple, salt, and pep-
per. Combine until well blended.
Serve on rolls, bread, or
croissants sprinkle with some ca-
shews or pecans. This can also be
served on a lettuce leaf.
BUTTERMILK FRIED
CHICKEN TENDERS
2 pounds chicken tenders
3-4 cups vegetable oil, for
cooking
For the Marinade
1 cup buttermilk
1-1/2 teaspoons salt
1/4 teaspoon cayenne pep-
per
1/4 teaspoon garlic powder
1/4 teaspoon paprika
For the Breading
1-1/2 cups all purpose flour
1 heaping teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon garlic powder
3/4 teaspoon paprika
1-1/2 teaspoons baking
powder
3 tablespoons buttermilk
Combine the chicken ten-
ders with all of the marinade in-
gredients in a large ziplock bag.
Seal the bag tightly and smush
it around to ensure chicken ten-
ders are evenly coated with but-
termilk and seasoning. Place in
a bowl (in case of leakage) and
refrigerate overnight, or at least
4 hours.
Make the breading by
combining the flour, salt, pep-
per, garlic powder, paprika and
baking powder in a large bowl.
Whisk until well combined, then
add the buttermilk and stir with
a fork until mixture is evenly
clumpy.
Line a baking sheet with
aluminum foil. Remove the
chicken tenders from the mari-
nade a few at a time and toss
into the flour mixture. Be sure to
press the chicken firmly into the
breading so clumps adhere to the
meat. (It’s best to use one hand
to remove the tenders from the
bag and the other to toss in the
breading.) Set breaded tenders
on prepared baking sheet.
Line another baking sheet
with a few layers of paper tow-
els and set aside. Add oil to a
large, high-sided pot until the
level reaches about 3/4-inch.
Heat over high heat until oil is
shimmering. (If a cube of bread
sizzles when you drop it in, it’s
ready.) Using tongs, place sev-
eral chicken tenders in the hot
oil without crowding the pan.
Cook until golden brown on the
bottom side, a few minutes, then
flip and cook until second side is
also golden, a few minutes more.
Set cooked tenders on baking
sheet lined with paper towels to
drain. Fry remaining tenders in
batches. Serve hot.
CHICKEN AND RICE
CASSEROLE
2 cups cooked rice
2 cups (8 ounces) shredded
Monterey Jack cheese
1 1/2 cups cooked, chopped
chicken breast meat
1 can (12 fluid ounces)
Nestle Carnation Evaporated
Milk
1/2 cup finely chopped red
onion
2 large eggs, lightly beaten
1/4 cup finely chopped ci-
lantro
2 tablespoons butter or mar-
garine, melted
1 tablespoon diced jalape-
nos
Salt
Preheat oven to 350-F
Lightly grease 2-quart casserole.
Combine rice, cheese,
chicken, evaporated milk, onion,
eggs, cilantro, butter and jalape-
nos in prepared casserole; stir
well.
Bake 45 to 50 minutes or un-
til knife inserted in center comes
out clean. Season with salt.
WHITE CHICKEN
ENCHILADAS
Chicken enchiladas with
green chili sour cream sauce
10 soft taco shells
2 cups cooked, shredded
chicken
2 cups shredded Monterey
Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green
chillies
Preheat oven to 350 degrees.
Grease a 9x13 pan
Mix chicken and 1 cup
cheese. Roll up in tortillas and
place in pan.
In a sauce pan, melt but-
ter, stir in flour and cook 1 min-
ute. Add broth and whisk until
smooth. Heat over medium heat
until thick and bubbly.
Stir in sour cream and chil-
ies. Do not bring to boil, you
don’t want curdled sour cream.
Pour over enchiladas and top
with remaining cheese.
Bake 22 min and then under
high broil for 3 min to brown the
cheese.
PEANUT BUTTER
SHEET CAKE
2 cups Sugar
1 teaspoon Baking Soda
2 cups Flour
1 teaspoon Salt
2 sticks Butter
1 cup Water
1 cup Peanut Butter
U cups Milk
1 teaspoon Vanilla
2 whole Eggs
1 stick Butter
U cups Peanut Butter
6 teaspoons Milk
1 pound Powdered Sugar
In a large bowl, mix together
sugar, baking soda, flour and salt.
Set aside.
Combine butter, water and
peanut butter in saucepan and
bring to boil. Pour over flour
mixture.
Add milk, vanilla and eggs.
Mix.
Pour in large cookie sheet or
jelly roll pan. Bake at 400F de-
grees for 20 minutes.
Frosting:
Bring butter, peanut but-
ter and milk to boil in saucepan.
Add one pound of powdered
sugar. Pour warmed frosting over
cooled cake.

SEPTEMBER 21, 1942-
No issue on file. The Mirror
does not have any 1942 issues on
file. If anyone has any issues for
this year, we would love to make
copies.
SEPTEMBER 19, 1952-
~ The Bulldogs opened their
football season against Mart on
September 19.
~ City Commimssioners, in
order to channel growth of the
city along the most advantageous
lines, established and appointed
members to a zoining commis-
sion. The first zoning commis-
sion members were Charlie
Hering, O.M. Weatherby and
Vincent Edwards. They proposed
five zone districts—first residen-
tial, second residential, commu-
nity store, commercial, manufac-
turing and unrestricted.
~ Cecil Muegge was elected
president of the junior class at
McGregor High School. Other
officers were Billie Jean Hall,
Mary Webb, Charles Jenkins,
Shirley Farmer and Dean Alli-
son.
~ Nate Chadrow’s Fair Store
advertised dresss socks for five
pairs for $1; wash dresses sold
for $1.69 and new fall dresses
were advertised for $5.88. Men’s
Khaki pants sold for $2.98 and
workshirts were $1.15. Broad-
cloth sold for 49 cents a yard.
~ The Texas Theatre had
a full week’s lineup of mov-
ies—five of these included Bo-
ris Karloff and Bela Lugosi in
Body Snatcher, Charles Saugh-
ton and Sir Cedric Hardwick in
The Hunchback of Notre Dame,
Red Snow, Clash By Night, Wild
Stallion. Admission was 40 cents
for adults and children’s price
was 14 cents.
SEPTEMBER 21, 1962-
~ McGregor eighth grade
cheerleaders were Linda Chau-
doin, Nancy Stewart, Betty Lu-
edtke, Helen Fisk and Dale Ew-
ing.
~ MHS Class Presidents for
1962-63 were: Senior Class—
Tom Britton; Junior Class—Jer-
ry Boemer; Sophomore Class—
Larry Brinkley and Freshman
Class—Johnny Johnson. Other
senior class officers were Joel
Leavitt, Donna Luedtke, Lynn
Witte, Kyle Baker, Barbara Ben-
nett, David Anderson and Jerry
Elliott. Sponsors were Don Ber-
ry, Cecile Folley, Ruth Howard,
Dan Junell and T.H. Jenkins.
~ Lee Hardware advertised
open stock Franciscan earthen-
ware. Desert Rose coffee pot
sold for $5.56, the butter dish
cost $3.16 and mugs were $1.56.
SEPTEMBER 21, 1972-
~ Leading the cheers for the
Bulldogs were Jan Symank, Su-
zanne Spoonts, Debora Brown,
Betty Walters, Marla De Witt and
Becky Boren.
~ J.W. Arbuckle was pro-
moted to assistant postmaster.
~MHS class officers were
elected. Senior class officers
were Mike Boson, Steve Hayes,
Jerry Reese, Mike Sparks, Mat-
tie Berkley and Kevin Cathey.
Presidents of the other classes
were: Juniors—Margaret Berger;
Sophomores—Marvin Whitt and
Freshman Class—Ronnie Bolin.
SEPTEMBER 23, 1982-
~ The City of McGregor set
its tax rate at 30 cents per $100
valuation and raised the water
rate minimum from $7 to $10,
and changed the 1,000 gallon
charge from $1.20 to $1.35.
~ MHS drum majors were
Suzy Stewart and Kayla Free-
man. Twirlers were Regina Mur-
phy and Tonia Fuhrman. Flag
team captains were Tammy Fin-
ley and Melissa Miller.
~ Marilyn Winingham be-
came the bride of Kenneth Judy.
~ City police killed 57
skunks in the city limits during
the past two weeks.
~ Mrs. Eva Nell Wiese was
honored by Sixth and Adams
Church of Christ for 50 years of
service to the church.
~ MHS FHA officers were
Angie Anderson, Angelia West,
Shelly Bement, Karl Hoehn, Al-
thea Lange, Curtis Drake, Shera
Wilson and Kaye Flores.
SEPTEMBER 21, 1992-
~ McGregor held its Found-
ers Day festival celebrating its
110th birthday.
~ Zion Lutheran Church un-
veiled its historical marker.
~ Rocket Federal Credit
Union had the dedication of its
new building.
~ Mr. and Mrs. M.J. Norris
celebrated their 50th Wedding
Annivnersary.
~ Crawford Cheerleaders
were Chesca Pledger, Cristy Ple-
mons, Kim Lewis, Leslie Diet-
erich, Amy Vandiver and Kamy
Rapp.
~ Crawford twirlers were
Jennifner Bukett, Azure Bohne,
Erika Lammert and Shauna Oter-
holtz.
SEPTEMBER 19, 2002-
~ McGregor School Board
announced its new field house
would be named for the late
Frank Graves in an unanimous
decision. Graves was a former
trustee who served over 20 years
on the board.
~ Charlie and Betty Johnson
celebrated their 50th Wedding
Anniversary.
~ Design Guild Fine Furni-
ture opened its doors for business
in the former Gilmore and Davis
building. McGregor Chamber
and Community Development
hosted a reception.
~ MHS Class of 1977 held
its 25th Class Reunion. Attend-
ing included: Tami Mize Hnnter,
Rita Thompson York, Lisa Scott
Cobb, Kathy Sweatt Graddick,
Stacy Holder Farrar, Trade Las-
siter Pierson, Kathy Pleasant, Joe
