This column is a
celebration of both.
Cold weather fare
Nothing beats a hot bowl
of soup served with a slice of
cornbread on a cold winter night.
Soup is a favorite meal of our
family.
Zella Massey Rogers made
the best Vegetable Beef soup
ever. I think I have finally per-
fected it. That’s what my brother-
in-law Gene Taylor said recently.
What he actually said was he
had forgotten what Zella’s soup
tasted like until he had mine that
evening. This was high praise, let
me tell you.
She didn’t have a recipe,
but just added to the pot. That’s
what I did. I will try making it
again and measuring and add the
recipe to this column in coming
weeks. In the meantime why not
try these.
CHICKEN POT
PIE SOUP
1 sheet puff pastry, thawed
2 boneless, skinless chicken
breasts, cooked and shredded
1 T. olive oil
2 T. unsalted butter
1/2 sweet onion, diced
1 cleaned and trimmed leek,
sliced
1/3 cup chopped carrots
1/4 cup chopped celery
2 garlic cloves, minced
2 T. flour
1/2 teaspoon salt
1/2 teaspoon pepper
3 1/2 cups low-sodium
chicken stock
1 cup lowfat half and half
1.5 pounds yukon gold pota-
toes, cut into 1/2 inch chunks
1/2 cup frozen peas
1/2 cup frozen com
Preheat oven to 425 degrees
F.
Heat a large pot over me-
dium heat and add olive oil and
butter. Stir in onions, carrots,
celery, leeks, salt and pepper,
tossing to coat, then let cook un-
til soft, about 5 minutes. Stir in
garlic and cook for 30 seconds,
then stir in flour. Stir well to
distribute the flour throughout
the vegetables and coat them,
then cook for about 3-5 minutes,
stirring to create somewhat of a
roux and thickening agent. Most
of the flour will stick to the veg-
etables, but you do want it to turn
a slightly golden color and smell
a bit nutty, (ha... that sounds in-
teresting.)
At this point, use a biscuit
cutter (or even a knife) and cut
12 “biscuits” out of your thawed
puff pastry sheet. Place them on
a baking sheet (brushing with
some beaten egg if desired) and
bake for 10-12 minutes, or until
golden brown.
Add in potatoes, chicken
stock and half and half to the
soup, stirring and allowing the
mixture to come to a bubble. Re-
duce heat to medium low, add in
chicken, peas and corn and cov-
er, simmering for 10-15 minutes.
Taste and season with more salt
and pepper if needed. Serve with
puff pastry on top!
BAKED POTATO SOUP
2 large baking pota-
toespeeled, halved lengthwise
and thinly sliced crosswise
3 cups milk
Salt and pepper
1/2 head cauliflower, cored
and chopped
1 bunch scallions, white and
green portions thinly sliced sepa-
rately
4 slices bacon
1 cup shredded cheddar
cheese (about 2 ounces)
1/4 cup sour cream
directions
In a large saucepan, combine
the potatoes, 2 cups milk and 1
teaspoon salt. Cover and bring
to a boil over medium-high heat.
Lower the heat to medium-low,
add the cauliflower and scallion
whites, cover and simmer until
tender, 10 to 15 minutes. Add the
remaining 1 cup milk, then puree
the soup. Season with salt and
pepper.
Microwave the bacon at high
power until crisp, 3 to 4 minutes;
crumble. Divide the soup among
4 bowls and top with the shred-
ded cheese, sour cream, crum-
bled bacon and scallion greens.

was held among Chamber direc-
tors about getting a new road

side of the area to Highway 317.
~ Mrs. Bill Bishop served as
chairman of the Mother’s Porch
Drive. Bryon Davis was March
of Dimes chairman.
~ Poll Taxes “Tickets to
Vote” were on sale for $3.50 for
anyone over 21 years of age.
~ Winn’s would open a new
store in McGregor this week. The
store was located in the building
formerly occupied by the Delite
Cafe. F.E. Herrell would be the
manager.
~ F.A. Warren was elected
president of the Rocket Soci-
ety. Serving with him were C.B.
Lusk, W.D. Ferguson and St. RJ.
Gianella.
~ Dave Rusing, a McGregor
auto mechanic for 14 years, be-
gan working at McMullen Auto
Parts. This announcement was
made by Cecil McMullen.
JANUARY 18, 1973-
~ School was closed due to
ice and snow this week—four
inches of snow, in fact. Mercury
bounced from 71 degrees Mon-
day morning to 8 degrees by 9:00
p.m.
~ Carrol Ward was chairman
of the 1973 Rotary Pancake Sup-
per.
~ Crawford mayor Edwin
Lammert announced that he
would not seek another term of
office. He had been on the coun-

pushed a symbolic buttom sig-
nalling the start of production
of a new product—unit ventila-
tors at the Trane Company’s Mc-
Gregor Plant. The new addition
created an additional 120 jobs.
~ McGegor Volunteer Fire
Department answered 76 fires
during 1992. Total loss was
$117,043.

Paul Estrada, Matt Logan, David
Haynes, Jr., Tim Jackson, Matt

1 T. olive oil
1 cup prechopped onion
1/3 cup prechopped celery
1/3 cup chopped carrot
1 T. minced chipotle chile,
canned in adobo sauce
1 teaspoon ground cumin
1 teaspoon chili powder
2 teaspoons minced garlic
4 cups fat-free, lower-sodi-
um chicken broth
1 (15-ounce) can white
hominy, rinsed and drained
1 (15-ounce) can no-salt-
added fire-roasted diced toma-
toes, undrained
12 ounces peeled and dev-
eined medium shrimp
1 T. fresh lime juice
1/8 teaspoon salt
1/2 cup lightly crushed
baked tortilla chips (about 1
ounce)
1 cup diced avocado (about
1/2 pound)
2 tablespoons fresh cilantro
leaves (optional)
Heat a Dutch oven over me-
dium-high heat. Add oil to pan;
swirl to coat. Add onion and next
6 ingredients (through garlic);
cook 6 minutes or until carrot is
crisp-tender, stirring occasion-
ally. Add broth, hominy, and
tomatoes; bring to a boil. Cover
and cook 6 minutes, stirring oc-
casionally. Add shrimp; cook 2
minutes or until shrimp are done.
Remove from heat; stir in
juice and salt. Divide shrimp
mixture evenly among 4 bowls;
top evenly with chips and avo-
cado. Garnish with cilantro, if
desired.
HOMEMADE
CORNBREAD MIX
For the cornbread mix:
4 cups flour
3 cups yellow commeal
11/4 cups sugar
6 T. baking powder
11/2 teaspoon salt
To make cornbread (makes 6
muffins)
1 cup cornbread mix
2 T. vegetable oil
1 egg
1/3 cup milk
Measure all cornbread mix
ingredients into a large bowl.
Whisk thoroughly to combine.
Store in an airtight container
for up to 6 months.
To make cornbread (makes 6
muffins)
Whisk together one cup of
the cornbread mix, oil, egg and
milk.
Pour batter into greased
muffin cups or pan.
Bake at 400 degrees for ap-
proximately 15-17 minutes.

~ Weather took a deep-freeze
grip on the McGregor commu-
nity and took its time letting go.
Low temperatures reached 12
degrees and had not risen above
20 degrees through the week.
Ross Crouch was pictured taking
the temperature reading at Mc-
Gregor Milling and Grain.
~ Cleve Amsler was hon-
ored by the McGregor Garden
Club with a lifetime membership
and the bestowing of him the ti-
tle “McGregor’s First Citizen of
Horticulture”. The citation was
for his many contributions to
civic welfare and beautification.
He was mayor of McGregor be-
tween 1946 and 1950 and aided
in organizing the McGregor Gar-
den Club.
~ Rex W. Bessire, a program
manager at Rocketdyne, was
elected president of the Rock-
etdyne-McGregor Management
Club. Other officers were T.R.
Kirk, D.L. Edgemon, L.E. Klein
and A.H. McCutcheon. Serving
on the board of directors were
S.D. Davis, B.N. Jenkins, W.M.
St. John, A.H. Wolf and J.M.
Bishop.
~ Rannel Graves, who had
operated a barber shop in Mc-
Gregor for 18 years, sold his
shop to Hadden O’Neal of Ham-
ilton. Graves said he wasn’t re-
cil for 25 years, serving 10 years
as mayor.
~ William Zacharias was
elected board vice president of
First National Bank of McGregor
at the annual stockholders meet-
ing.
~ Freddie Douglas, Mc-
Gregor Bulldog offensive end
and middle guard, was named to
the Super Centex football team.
~ Mr. and Mrs. Gordon
Frady of Crawford celebrated
their Golden Wedding Anniver-
sary.
~ Miss Carol Fontenot be-
came the bride of Ernest Zost.
~ Mrs. Doris Layne, a 23-
year employee of Oglesby State
Bank, was elected assistant ca-
shier by its Board of Directors.
JANUARY 20, 1983-
~ An Arbor Day Program
and Tree Planting ceremony by
the McGregor Garden Club, add-
ed over eight new Red Oak trees
at the McGregor Cemetery.
~ McGregor EMS President
Louise Walter and Vice Presi-
dent Joseph Williams proudly
showed off McGregor’s newest
ambulance. The new unit repre-
sented an expenditure of $22,000
with a value of $58,000. The
old high top unit would now be
used as a backup ambulance.
The new ambulance was paid for
without having to dip into sav-
ings—thanks to the generosity of
citizens through memorials and
other contributions.

~ El Nora Lawton was the
recipient of the Hermann Sons
Humanitarian Award.
~ Miss Terina Gilbert be-
came the bride of Joseph Wil-
liams II.
JANUARY 16, 2003-

Oglesby, Crawford, Moody
and surrounding communities
of Gatesville, Lorena, Midway
and Speegleville were invited
to a community meeting to
learn more about the partner-
ship between McGregor ISD and
McLennan Community College
McGregor Center and to discuss
the college’s plans for the Mc-
Gregor satellite campus. MISD
would vacate the T.H. Jenkins
Elementary Campus in the sum-
mer when it moves to a new
elementary school facility and
MCC will begin offering variety
of day and evening classes at the
McGregor Center this fall.
~ Katy Ward, a senior at
Crawford High School was to
compete in the State Band com-
petions in San Antonio. She
played clarinet. She placed first
at regional competition and sixth
chair at area.
~ Freddie Rollins and David
Haynes, Jr. were selected to the
Super Centex team. Rollins was
named to the first team defense
as a linebacker and Haynes, was
named to the second team as a
defensive back. Daniel Haw-
thorne received an honorable
