A whole hams, because of its
versatility in meal planning, is

meat buys, whether you boy the
pre-epoked of cook-before-ret-
ing variety. ~
A good rule-of-thumb to fol-
low in buying bam for one meal
only is to allow one-fourth
pound per person of boneless
ham or one-half pound per per-
son of ham with the bone in.
Most homemakers, consider-
ing eitra dividend dishes made
from left over ham, buy more
than enough for the one meal.
After the family has had its
fUl of baked glared ham, a
large ham will provide Cried
ham slices for breakfast, thinly-
sliced ham far sandwiches,
small pieces of ham for season-
ing vegetables, a variety of cas-
serole dishes and pea or lentil
soup using even the ham bone.
Two of our favorite Taste
Tempters made from left over
ham are the following for Bam
Loaf and Ham • Squash - Onion
Casserole:
HAM LOAF
12^ lb. cooked ham (ground)
lb. cooked park (ground)
1 egg
2 cups dry bread crumbs
2 cups milk
4 teaspoons prepared mustard
Combine all ingredients and
shape into loal Place loaf in
. ungreased T”xl(Tx3” bread pan
and bake 45 minutes in gas
oven which has been preheated
to 325 degrees F. Allow cooked
loaf to stand 15 to 20 minutes
before slicing. Serves eight
HAM-SOU ASH-ON ION
CASSEROLE
8 medium yellow squash
11/2 cups cubed cooked ham
8 to 8 small white onions, cooked
2 cups medium white sauce
t/o cup grated American cheese
4'hard-cooked eggs, sliced
Bread crumbs
Salt and pepper to taste
Slice squash in one-inch slic-
es; place in boiling, salted wat-
er. Cook over simmer flame un-
til crisp-tender; drain. Spread
in the bottom of a casserole
Spiced ham cubes over squash
Place onions around edge cf
; squash and ham. Arrange sliced
j eggs over alL Add cheese to hot
I white sauce; pour over contents
of casserole. Season with salt
and pepper and sprinUc with
bread crumbs. Bake in moderate
390 degrees F. gas oven about
20 minutes. Serves four to five.

ed appointment to the board by
the Texas governor and serve
in order to do what they can to
conserve the waters of the Sa-
bine River watershed area.
The Sahtne River Authority
of Texas was formed fay act of
the Texas legislature In 1M9.
It Is an agency of the state but
does not have taxing power.
The Authority constructed
and operate* the popular a
valuable Lake Tswakoni in the
upper reaches of the Sabine Ra-
ver. It Is hi the process of let-
ting bids for contracts prepara-
tory to constructing, beginning
in late summer, a giant reser-
voir and dam in the middle
reaches of the river. This proj-
ect. known as the Toledo Bend
Joint Operation, is being carried
out in cooperation with the Sa-
bine River Authority of louisi
ana.
