Six thin limn beefsteaks (minute or cube stesks), 1-2 pound
lean pork, or vosl, 1-2 teaspoon salt, 6 gherkings, 1-3 cup but-
ter or drippings, 1 eup water, 1 teaspoon flour (for thickening,
if desired).
Wipe ltio beef and pork with a damp cloth. Salt the beef-
steaks. Cut the pork into 6 stripe. Ley a strip of pork on each
beefsteak and place a gherkin in the middle of each and roil
up. Tie mile with thread or hold together with toothpick*. Brown
them in butter. Add 1 cup water, cover and simmer the birds
for one hour, adding more water from time to time if necessary.
Thicken the gravy, if desited, with flour mixed to a thin pe
