This recipe was prepared by
Anne Buchanan, County Ex-
tension Agent from Morris
County for part of the Media
Day refreshments. I thought
you would like it for your files.
Sweet Potato Bread
Three and one-half cups
flour; 2 teaspoons soda; 1
teaspoon salt; 1 teaspoon
cinnamon; 1 teaspoon nutmeg;
3 cups sugar; 1 cup oil; 4 eggs,
beaten; two-thirds cup milk; 2
cups cooked sweet potato,
mashed; 1 cup pecans, chop-
ped.
Sift all dry ingredients into a
large bowl. Add remaining
ingredients and mix well. Place
in 2 lightly greased bread pans
and bake for approximately .1
hour at 325 degrees F. (If small
pans are used you may have to
use 3 bread pans, cut down
baking time accordingly.)
