Thanksgiving and turkey and
mashed potatoes and gravy
comes up next week, so why
not keep your meals light in
weight and in flavor until the
big day is here?
Stuffed peppers are
something we never think
about until we start thumbing
through the big recipe book
looking for that “something
different.” This calls for
ground lamb, but you can, of
course use ground beef.
STUFFED GKEEN PEP-
PERS
6 medium green peppers
1 pound ground lamb
V\ cup chopped onion
lVfe cups cooked rice
2 tablespoons chopped
parsley
1 teaspoon salt
teaspoon curry powder
Dash pepper and salt
l/2 cup pineapple juice
Cut slice from stem end of
peppers; scoop out seeds and
white membrane. Parboil in
salted water for 10 minutes.
Remove and drain.
Meanwhile, lightly brown
lamb (or beef), stirring with
fork to keep particles of meat
separated; add onion, cook
about 5 minutes; drain off
excess fat.
Add rice, parsley, seasonings
and pineapple juice; toss
lightly. Fill peppers with lamb
mixture; arrange in baking
dish containing about 1 inch
water.
Bake in hot oven (350 degrees
F.) about 45 minutes or until
peppers are tender.
Serve with a slice of
pineapple.
