You meet some great folks as
you travel the blue highways
of Texas BBQ. Shannon
Bankston and Heather Hoff of
Fatboy's BBQ in Cooper are
those kind of people.
A year ago, Marshall
Cooper and I met Shannon
and Heather at Fatboy's, then
located in the tiny town of
Ladonia in northeast Texas. It
was a slow day in the town
of 613 residents, so we talked
BBQ for half of the afternoon,
which of course is one of our
favorite things to do. Fatboy’s
had been open for two and a
half years at that point.
In April 2012, they moved
their entire BBQ operation
to Cooper, population 1,961,
located 18 miles east of
Ladonia. The location on
a busier road in a bigger
community would eventually
allow them to triple their
weekly food sales. Cooper is
located 80 miles northeast of
Dallas, near Commerce.
We really liked their BBQ
the first time around, but we’re
pretty sure it’s gotten even
better with the move. Shannon
is a wood-only hardcore, that’s
the way he was raised to cook
BBQ. He’s preaching to the
choir when it comes to the
Posse.
In fact, Shannon recently
coined the term, “If it ain’t
wood, it ain’t good.” Well
played Mr. Bankston, well
played.
The meats at Fatboy’s
continue to be cooked low
and slow using only seasoned
pecan wood. Marshall declared
the ribs and brisket cooked
“absolutely perfectly.” That’s
a real compliment from a guy
who has 30 years experience
cooking real Texas BBQ.
Shannon has added a simple
salt and pepper rub to his
brisket and ribs, just enough
to add another layer of flavor
to Fatboy’s meat offerings.
After the move, Fatboy’s was
originally open on Saturdays
but decided to go Monday-
Friday only. Business was just
too slow in downtown Cooper
on the weekends, despite
activity at nearby Cooper
Lake, considered one of the
best fishing lakes in the state.
They will reconsider the move
only if they think it makes
good business sense.
During the week though,
they have been busier than
ever, with double-parkersfiling
the parking lot. Great service
is a big deal to Heather, who
greets almost every customer
by name. If you’re not friends
yet, you will be soon...

Counterfeit Bills Surface in Commerce
COMMERCE — An
unknown person or persons
is passing off counterfeited
low currency bills at local
businesses in town.
On Friday, April 05,2013 just
before 11 a.m. the Commerce
Police Department was
contacted about counterfeited
currency by one of our local
banks. We have since found
out that local business of all
types have been receiving
counterfeit $5, $10 and $20
bills. This is unusual because
in the past, currency forgeries
have usually been $50 and
$100 bills.
The businesses unknowingly
then bring the bills to the banks
for deposit at which time the
machines detect the counterfeit
bills. The businesses are then
at a loss for that amount that
is detected to be a counterfeit.
These bills are visually
legitimate, however a simple
check against the light shows
that they are missing the
security stripe and watermarks
(the picture of the president)
that should match with the
picture of the bill. One is
able to quickly tell if it is a
counterfeited bill by applying
a little bit of moisture to it
and rubbing it off. The ink on
the bill will run. The ink on a
legitimate bill will not mb off
with moisture or water.
We are asking all of our local
business to be on the lookout
for the counterfeit currency. If
you get a counterfeit bill, please
contact the Commerce Police
Department right away so that
we may be able to identify the
suspect or suspects involved in
this type of crime. If you know
a business owner in town,
please pass on this information
to them. Likewise, if you are
receiving change in currency
from a business, please be sure
to check to make sure that you
are not unknowingly receiving
counterfeited currency.

PUBLIC NOTICE FOR EIGHT TERMS STARTING
IN SEPTEMBER OF 2013
Notice is given that the North East Texas Regional Water Planning Group (NETRWPG) is
accepting nominations for positions to serve as voting members. Due to the expiring terms
of eight positions, appointments will be made for each of the eight terms. State law and the
Bylaws of the NETRWPG require diversity in the membership of the NETRWPG. Section
16.053 of the Texas Water Code lists the required interest groups and the requirement that
the regional planning groups maintain adequate representation from those interests. To
preserve that each interest group has proper representation; selections must include at least
one representative from the following interest groups: River Authorities and Water Districts.
To preserve geographical diversity on a county level, selection for terms starting September
of 2013 one member must come from the following counties: Franklin, Gregg, Red River,
and Upshur. Due to existing overlap, four members could be selected from any county
within the region. The effort to strive to achieve geographical diversity is found in Article
V, Section 4 of the NETRWPG Bylaws. Terms are expiring for positions held by Michael
Brown, Jeremy DuMond, Charles Gillis, Darrell Grubbs, Robert Holt, Kevin Spence, Troy
Henry and Linda Price. In this selection process, NETRWPG will strive to achieve interest
group, geographic, ethnic and gender diversity. To be eligible, a person must be qualified
as set forth in the NETRWPG Bylaws. The conditions of membership are set forth in
the NETRWPG Bylaws. This method for submission of nominations shall be to submit
nominations to the principal administrative office of the NETRWPG. The mailing address
for such office is Northeast Texas Municipal Water District, P O Box 955, Hughes Springs,
Texas 75656. The physical address of such office is 4180 Farm Road 250, Hughes Springs,
Texas 75656. The deadline for submission is June 26, 2013.
