MEAT LOAF WITH
CHEESE FILLING
Preheat oven to 390 decrees
14 lbs ground meat
1 beaten egg
\ cup cracker crumb*
4 cup finely chopped onion
1 t. salt
1 cup* tomato sauce with
‘heme (comm in can with
ingredients combined;
4 t. oregano
4 t. pepper
* cupe grated cheoae
(monareUe or Cheddar)
Mix all ingredients except
cheese and one third cup of the
tomato and cheeae sauce
Flatten meat mixture on
I3xix3-inch baking dish. Place
Ijrated cheese in center and roll
moat mixture around cheese
filling Place dish, uncovered,
into preheated oven for one

Remove from oven onto
rack, pour one third cup
teens to sauce on top of moat
and return to oven for 15
minutes. Remove from oven
and serve
Yields eight large servings
QUICKIE SPAGHETTI
1 lb ground beef
1 t. garlic salt
2 T dried onion
4 t oregano
1 small chopped bell pepper
1 t. dry mustard
1 t Worcestershire sauce
4 t. salt and pepper
34 cups tomato juice
4 or thin spaghetti
Parsley and mushrooms
(optional'
Brown beef In 10-inch skillet
or Dutch ovan. Drain grease
Add all the seasonings and
bllend Break spaghetti into 3-
uich lengths and <k-op over
meat mixture Pour tomato
juice over all Bring to a boil,
quickly adjust flame to a low
flame so mixture simmers.
Cover tightly and cook 30
minutes Stir in parlsey to taste
and cover and cook 10 minutes
longer
Yields 4 servings
Economical, Easy-To-Make Dishes Are Tempting

Sprinkle with remaining
almond mixture Bake at
degrees for 25 minutes longer
or until baked in center Cut
HOT CHICKEN
SALAD
2 cups chopped celery
2 cups chopped cooked
chicken
1 cup mayonnaise
4 cup slivered almonds
(optional)
4 cup shredded sharp or
mild Cheddar cheeae
2 t. lemon juice
1 t. salt
4 t pepper
4 cup crushed potato chips
Combine celery, chicken,
mayonnaise, almonds, cheeae.
lemon juice, salt and pepper in
large bowi, mix well
Turn into buttered 14-quart
casserole Sprinkle with
crashed chips Bake at 450
degreca for 30 minutes
Yields six servings

TAMALF PIE
1 lb. ground beef
1 cup chopped onion
Two thirds cup chopped
tomato
1 4-oz can chopped green
chiles
1 T chili powder
14 t pepper
14 t garlic salt
4 t. cumin
4 cup cornmeal
4 cup flour
4 t salt
4 t baking powder
1V« cups hot water
4 cup soft margarine
1 cup shredded mild natural
Cheddar cheeae
Brown meat, drain Add
onion ( oak until tender Add
green chilies and veasoning.
mix well
Combine cornmeal. flour,
salt and baking powder Add
water and margarine, beat
until smooth Pour cornmeal
mixture into a greased 10-inch
pie plate Spoon meat mixture
into center of cornmeal
mixture and press down
gently Bake at 400 degrees 25
minutes Top with cheese,
continue baking until cheese is
melted
Six to eight servings
For a lunch box treat
ALMOND-PRUNE BARS
1 cup pitted prunes, chopped
coarsely
4 cup water
4 cup brown sugar packed)
1 cup butter or margarine,
softened
14 cups flour
I cup chopped natural
almonds
4 t baking soda
4 t salt
2 t grated orange rind
2 t cinnamon
Combine prunes, water arid
4 cup brown sugar in
saucepan Bring to boil and
simmer, uncovered, for 10
minutes until soft and
spresdable
In mixer bowl, beat butter
with flour, almonds, baking
soda. salt, orange rind,
cinnamon and remaining 4
cup brown sugar until mixed

Sprinkle pork chops with salt
