Recipe Ramble
Valentine s Day-A Good Time To Entertain Guests

Since Valentine's Day (alls
on Saturday this year. I am us-
ing some dishes that may take
a little longer to prepare but
they ail! come in handy if you
are having guests
1 am also including a couple
of recipes using peanut butter
chips for peanut butter lovers
SUPREME OF
CHICKEN A LA
CREME
4 chicken breasts
11. lemon juice
11. salt
Dash pepper
4 t marjoram
4 cup (4 stick l butter
1 cup whipping cream
2 egg yolks, slightly beaten
4 t. curry powder
B large mushroom caps
4 cup (2 ot.) shredded swiss
cheese
Chopped parsley
Split chicken breasts, bone
and remove skin. Sprinkle
chicken breasts with lemon
juice, salt, pepper and mar-
joram. Saute in butter in 12-
inch heavy skillet over medium
heat, turning once, until done.

Remove to oven-proof platter
and keep warm. Add cream,
egg yolks and curry powder to
skillet Cook over low heat, stir-
ring constantly, until thickened
slightly.
Saute mushrooms lightly in
butter Place a mushroom cap
on each chicken breast Pour
sauce over top, sprinkle with
cheese. Broil 3 to 4 inches from
heat until lightly browned, 3 to
3 minutes. Garnish with
parsley
Four servings
SHRIMP ELEGANT
1 package < I lb. t frozen shell-
ed, deveined shrtmp
IT lemon juice
2T. butter
1 clove garlic, crushed
1T. finely grated onion
2T. all-purpose flour
4 t. salt
Vs t. dry mustard
tn cup condensed chicken
broth, undiluted
V? imp milk OR half and half
V* t. Worcestershire sauce
4 cup whipping cream, whip-
ped
4 cup grated parmesan
cheese
Cook shrimp according to
package directions, drain.
Place in shallow baking dish or
gratin pan Sprinkle with lemon
juice Keep warm
Melt butter, add garlic and
onion and saute until tender
Blend in flour, salt and dry
mustard Cook over low heat
until flour is well blended
Remove from heat Stir in
chicken broth, milk and
Worcestershire sauce. Heat to
boiling, stirring constantly.
Boil and stir 1 minute. Remove
from heat, let stand 10 minutes
to cool slightly Sprinkle with
parmesan cheese and broil un-
til hot and lightly browned, 5 to
t minutes Serve with hot. cook-
ed rice.
Four servings.
WHIPPED CREAM
CAKE
2 cups sifted cake flour
1 Vs cups granulated sugar
2 T. baking powder
4t. salt
2 cups whipping cream
11. almond extract
3 egg whites at room
temperature
V« t. cream of tartar

Confectioner's sugar
Combine flour, sugar, baking
powder and salt, set aside
Whip 14 cups cream in a
chilled bowl with chilled
beaters until stiff peaks form,
scraping bowl occasionally.
Fold in almond extract and re-
maining 4 cup cream.
Beat egg whites with cream
of tartar until stiff but not dry.
Fold egg white mature into
whipped cream. Gradually fold
the dry ingredients into the
cream mixture Pour into two
buttered and floured 9-inch
round rake pans. Bake in
preheated 330-degree oven 23 to
30 minutes Cool In pans 10
minutes. Remove from pans
and cool completely on wire
racks.
To assemble, spread 1 layer
of cake with preserves. Top
with second layer and sprinkle
lightly with confectioner's
sugar through a paper dolly for
a decorative pattern
Two layer 9-inch cake.
STRAWBERRY CREAM
PARF AITS
1 pint strawberries
41. lemon extract
1 cup whipped cream
1 package <34 ox.) coconut
cream instant pudding and pie
filling mix
14 cups cold milk
1 cup vanilla wafer cookie
crumbs
Wash, hull and slice
strawberries. Sweeten to taste
Add lemon extract to cream.
Whip in a chilled bowl with
''hilled beaters until stiff peaks
form, scraping bowl occa-
sionally Beat together pudding
mu and milk on lowest speed of
muer 2 minutes
Fold 1 cup lemon flavored
whipped cream into pudding
mixture, reserve remaining
whipped cream
Alternate layers of pudding
mixure, strawberries and
cookie crumbs in parfail "
glasses Top with dollops of
reserved lemon flavored whip-
ping cream. Chill until ready to
serve.
Four to 6 servings
BEEFSTROGANOFF
34 T. all-purpose flour
41. salt
14 lbs. beef sirloin, cut in
2x3-inch strips
V« cup 14 stick) butter
4 lb. fresh mushrooms, slic-
ed
1T. instant minced onion
1 can (104 ox.) beef broth
1 cup dairy sour cream
Combine 14 T. flour and salt.
coat meat with mixture In
skillet, melt butter brown
meat slowly on all sides Add
mushrooms and onion and
saute Sprinkle remaining 2 T.
of flour over meat and stir to
blend. Gradually add beef
broth. Cook over medium heat,
stirring constantly, until
thickened. Reduce heat and
simmer 3 minutes. Stir in sour
cream, heat to serving
temperature. < Do not boil).
Serve over hot buttered
noodles
PEANUT BUTTER
CHIP NUTBREAI)
4 cup shortening
4 cup sugar
2 eggs
14 cups unsifted all-purpose
flour
11. baking soda
11 salt
41. cinnamon
41, nutmeg
1 cup canned applesauce
2 cups (12 ox. bag) peanut
butter chips
4 cup chopped pecans
4 cup golden or seedless
raisins
Cream shortening, sugar and
eggs until fluffy Combine with
flour, baking soda, salt, cin-
namon and nutmeg: add alter-
natley with applesauce to
creamed mixture Stir in
peanut butter chips, pecans
and raisins.
Spread in waxed paper lined
9x3x3-inch loaf pan Bake at 330
degrees for 1 hour and 10
minutes or until cake tester in-
serted in center comes out
clean.
Cool 10 minutes, remove
from pan. Cool completely

Returns From Camp

These young people enjoyed
meeting In small groups with
new friends. In their discussion
groups, they talked about get-
ting along with parents, their
relationship with God and did
some self-examination exer-
cises.
Both groups had full and ex-
citing weekends with a dance
high-lighting the last night of
each convention, a spokesman
said.

Mr and Mrs Rudy V. Patter-
son of Portland have anounced
the marriage of their daughter,
Deborah Marie, to Gilbert
Fulton Ray II, son of Mr and
Mrs Charles D Ray of Taft
The double-ring ceremony
was held Friday, Jan 23 at 8
p.in. in the home of Mr and
Mrs Bill Stamp Ca(alien, aunt
and uncle of the groom
Matron of honor was Jennifer
Fish. Came Ray, sister of the
groom, served as bridesmaid
Delane Ray served as his
brother's best man and James
Petru, brother-in-law of the
groom, was groomsman.
A reception was held follow-
ing the ceremony. The bride’s
table held a three-tiered wed-
ding cake decorated in pink and
burgandy and encircled with
pink and burgandy flowers and
topped with white doves Punch
was served from a silver punch
bowl. Mint* were also served.
The groom's table held a Ger-
man chocolate cake topped
with pheasants and was
centered with an arrangement
of fall flowers Coffee and
chocolate covered nuts were
also served.
For a honeymoon trip, the
couple spent a week in Sim
Angelo. They will reside in
Taft.
The new Mrs. Ray U a
Gregory-Portland High School
graduate. The groom is a Taft
High School and Del Mar Col-
lege graduate He also attended
Abilene Christian College He is
presently employed at
Portland Welding and Machine
Inc.
