12 years, the per capita con
gumption of milk fat has dc
dined almost 20 percent,
while the consumption of milk
solids-uot-fat lias increased ap-
proximately 4 pereccnt.
This change in consumer
preference has influenced milk
processors to introduce low fat
milk products and has had a
negative effect on the con
sumption nf cream, butter and
evaporated milk.
It has stimulated the con
sumption of nonfat dry milk,
cottage choose, condensed milk
frozen desserts and American
cheese.
