Game meat differs In flavor
from domestic msat. with each
species of game having Us own
distinctive flavor and aroma.
The older and more active ani-
mals have a stronger flavor.
Game meat Is high In nutri-
tive value and adds variety to
t..«als. It Is rich In proteins,
fats, minerals, Iron, copper,
phosphorus, and the B vitamins.
Fresh and properly handled
game meat can be tender and
palatable when cooked by dry
heat such as roasting, broiling,
pan-brolllng and frying. Dry
heat preserves flavor and In-
sures tenderness. Basting with
additional fat may be necessary
U the meat Is lean.
Old and less tender game Is
best cooked.by moist heat such
as braising, stewing and simm-
ering.
Parboil only strong game to
reduce flavor U a strong game
flavor Is objectionable. Par-
boiling well-conditioned car-
casses will remove some of the
soluble nutrients and produce a
mild game flavor.
The strong gamey flavor Is
concentrated In the fat of an
animal. Therefore the removal
of this fat will cut down on the
strong flavor.
Still another way to reduce
gamey flavor and also make the
meat more tender Is by marin-
ating. A marinade Is made by
combining one-fourth part vine-
gar, three-fourths part water,
sugar and seasoning. Place
meat In the solution and re-
frigerate for 72 hours or longer.
It Is a rather dry meat and
can be Improved by adding butt -
er or margarine, suet or other
fat when broiling, pan-brolllng,
or roasting.
The method of cooking veni-
son are the same as those for
cooking other lean meats. Use
dry heat for tender cuts and
motst for less tender cuts.
Try this venison stewi
Venison stew--2 cloves gar-
lic, 1 onion, sliced, 3 table-
spoons shortening, 2 pounds
venison, 1 can tomato sauce,
1 cut water, 4 green peppers,
chopped, 3 potatoes, quartered,
6 carrots, halved, I bay leaves,
6 medium onions, salt and paper
to taste.
Fry sliced onion and garlic
In shortening; add the meat and
brown. Cover with tomato sauce
and 1 cup water; simmer 1
hour. Remove garlic; add carr-
ots, pepper, potatoes and whole
onions. Add additional water, If
necessary, seasoning, and cook
approximately 30 minutes, until
vegetables are tender. Serves 6.

ing In defensive maneuvers aga-
inst aggressive attacking forces
under simulated combat condi-
tions.
The 26-year-old soldier en-
tered the Army In January 1957
and was last stationed at White
Sands Missile Range, N. M.
A slot machine delivered a
jackpot while being carried to
court In Great Yarmouth, Eng-
land, as evidence If) a gambling
