Legislature Just Closed Voted
Appropriations to Amount
Of $7,738,509.
Austin, Tex.—The present legisla-
ture has appropriated $7,738,509. The
governor can veto some of it, but only
a small amount compared to the total,
as the larger amounts have been ap-
proved.
The board of control has recom-
mended general appropriations aggre-
gating 130,000,000 and there is a de-
ficiency of approximately $1,000,000
all of which will be considered at the
special session. In addition the spe-
cial session will be asked for $2,000,-
000 to aid the rural schooU. With
the special session expenses added to
the amount now appropriated and the
requisitions In prospect the total will
go to something over $41,000,000.
On the basis of sources of revenue,
and without regard to any that may
he created by thlg legislature, the
board of control estimates that the In-
come for the general fund for the next
two years will be $35,244,577.19. To
meet the estimate of $41,000,000 In
outlay It will he necessary for the spe-
cial session to find new sources of
ftixatlon to yield approximately $6,-
000,000, or $3,000,000 a year, less what-
ever comes from the tax levied on
sulphur production by a bill passed
at this session and plus whatever
amount the legislature adds to the
board of control budget.
An Itemization of the appropriations
already made follows: General de-
ficiencies, $423,509; citrus fruit ex-
perimental station, $50,000; Texas
Technological College, $1,00^,501); to-
pographic and hydrographic - surveys,
$600,000; emergency school appropria-
tion, $3,000,000; A. and M. College ex-
tension building, $100,000; prison loan
refund, $82,000; prison maintenance
appropriation, $600,000; legislative
mileage and per diem, $60,000; legis-
lative contingent expense, $40,000;
miscellaneous claims against the State,
$480,000; administration building of
North Texas Normal, $300,000; heating
plant at College of Industrial Arts,
$110,000; school survey, $50,000; nu-
merous minor appropriations, $25,000;
revising and codifying the laws, $72,-
500.

THAN IN ANY OTHER NATION
Washington.—Income tax require-
ments are the lowest in the United
States as revealed by a statement from
the bureau of Internal revenue, giving
figures for England, France, Germany
and Canada. On the basis of a married
man with two dependents, having an
income of $5,000, he would pay $68
In the United States, $320.76 In Eng-
land, $96 In France, $292 In Germany,
and $156 In Canada, The figure for
the United States Is arrived at by de-
ducting a personal exemption of $2,500
as the head of a family and $400 for
each of the dependents, and computing
4 per cent on the remaining $1,700,
which bears the tax.

Much Interest In Poultry Raising.
Eagle Lake, Tex.—Never before has
so much Interest In poultry raising
been taken by the farmers of the Eagle
f-ake community as is -shown this
ipring. Almost every farmer Is ordering
day-old chicks or eggs for batching

Hempstead, Tex.—Truck farmers are
now shipping spinach and radishes.

Texas Land Fraud Case.
Kansas City, Mo—W. E. Stewart, re-
cently convicted of UBing the malls to
defraud In an alleged $60,000,000 land
swindle In Hidalgo, Texas, was sen-
tenced In federal court Wednesday to
serve five years In the federal peniten-
tiary at Leavenworth. Kan., and was
fined $1,600 and costs, estimated at
about $5,000.
Planting Paperahell Pecan*.
Rockdale, Tex.—A number of Rock-
dale citizens have taken to planting
paperahell pecans. Coffleld and Hale
have bought and transplanted eleven
acres In the nut trees on the Williams
place a few miles north of town.

SEASONABLE SALADS

Apple Salad.—T ■ k *
two • nice crisp, well-
flavored apples, peel,
cut lu dice, add one-half
cupful of diced pineap-
ple and one cupful of
diced celery, seaaon with aalt and
cayenne and mix with u good salad
dressing. Garnish with narrow strip*
of unpeeletj red tipple and serve ou
heart leaves of lettuce.
Nut and Fruit Salad.—Cut in fin,
pieces one-half cupful of tender celery,
udd one cupful of finely diced Juicy
Hppl,e, two slices of pineapple finely
diced and a few shreds of red und
green pepper for color. Add one-hall
cupful of thinly sliced Brazil nut:
which have been carefully cracked
and the brown skin removed. Whip
one-half cupful of creum until stiff
add two tuldespounfuls of boiled
dressing or a heavy mayonnaise, seu
son well with salt, cayenne and s
dash of sugar. Serve on heart leaves
of lettuce.
Combination Salad.—Tnke one cup-
ful of chopped cabbage, one-half cup-
ful each of diced pineapple and Hpple,
shredded blanched almonds and
marshmallows. Mix the Ingredients,
sprinkle with salt, and add a boiled
dressing, using pineapple Juice Rnd
lemon Juice Instead of vinegar. Bur-
nish with small spoonfuls of whipped
cream und almonds. Serve on lettuce.
Mock Lobster Salad.—Tnke one cup-
ful of diced celery, one-half cupful of
shredded almonds, n spoonful of
onion (grated), marlnnte with French
dressing until serving time, then add
a mayonnulse dressing und serve on
lettuce.
Spinach and Egg Salad.—Take two
cupfuls of cooked spinach, add two
hard-cooked eggs cut In eighths, sea-
son well and serve with a mayonnaise
dressing on lettuce.
Royal Soup.—Cut up a fowl and pul
Into a cooker kettle of cold water.
Bring to the boiling point and put Into
a flreless cooker for six hours. Re-
move the chicken and to the stock add
one dozen onions—very small ones—
two diced carrots, one diced turnip,
one cupful of pous and two bay lenves,
with salt and peppier to taste. Ileheat
the radiator und bring the soup to a
boll; put tinck into the cooker and let
stand for two or three hours. Do not
strain, but serve with buttered toast.

The following Is some-
thing out of the ordinary
and may he used for a
company dish;
Olives In Aspic.—Stone
large-sized green olives and fill the
cavities with green butter. I’lnce
small molds In a pan of Ice water nnd
pour In the aspic Jelly mixture one-
fourth-ln<Ti deep. When firm put an
olive In each mold and add aspic by
spoonfuls until the mold is filled. Chill
thoroughly, remove from the mold and
garnish with strips of red pepper. For
the green butter, mix the yolk of hard-
cooked egg with softened butter, a
sprig of minced parsley and one of
tarragon, one small slmllot, anchovy
paste and a few capers with one ten-
spoonful of chopped gerklns or pickles.
Found In a mortar, then put through
a sieve. Season with salt, pepper aud
a few drops of vinegar.
Stuffed Prunes.—Take the large-
sized prunes, wash, soak and simmer
until tender. Fit them and fill some
with creamed cheese nnd chopped
(dives; others with fondant and a
blanched almond for center. Seeded
raisins, maple sugar, nuts and dates
chopped and mixed together make a
good filling, or use a spiced fondant,
prepared by adding cinnamon, clove,
allspice nnd nutmeg to fondant. Form
In u roll and Inclose In the prune.
Fish Balls.—Put two cupfuls of
mashed potato Into n frying pan. Add
salt, pepper nnd a little milk nnd some
finely minced green onions and pars-
ley. Cook slowly until well blended,
Add the yolk of an egg and one cupful
of shredded fish, previously cooked.
Mix well, form Into balls, dip In egg
white, then In cracker crumbs and
fry a golden brown.
When frying bacon attend strictly
to It. or It will be either overdone or
burned In streaks. When liked crisp
snd dry. remove the fat when It Is
still cooking, tip the frying pan to
drain off further surplus fat nnd the
bacon will he crisp and dry.
