The Lexington Eagles junior
varsity baseball team beat
Somerville 12-4 last week
Tuesday, improving their
record to 4-5 overall and 1-2
in district.

Heat oven to 350°. Grease and
flour baking pans (three 8-inch
round layer pans). In large mixer
bowl, mix butter, sugar, eggs and
vanilla until fluffy Beal 5 minutes
on high speed, scraping bowl
occasionally. On low speed, mix in
flour, baking powder and salt
alternately with milk. Pour into
pans.
Bake layers 30-35 minutes or
until wooden pick inserted in center
comes out clean. Cool.
Frost cake with White Mountain
Frosting and fill with Clear Lemon
Filling.
White Mountain Frosting
1 % cups powdered sugar
1 % sticks of butter
3/4 cup shortening
4 % tablespoons flour
1 cup milk
1 % teaspoons vanilla
Cream powdered sugar, butter
and shortening. Add flour one
tablespoon at a time. Add vanilla
and milk at room temperature, beat
for approximately three minutes.

Clear Lemon Filling
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup water
1 teaspoon grated lemon peel
1 tablespoon butter or margarine
1/3 cup lemon juice
Mix sugar, cornstarch and salt in
saucepan. Gradually stir in water.
Cook, stirring constantly, until
mixture thickens and boils. Boil
and stir one minute.
Remove from heat; add lemon
peel and butter. Gradually stir in
lemon juice and if desired, 4 drops
of yellow food color. Cool
thoroughly If filling is too soft,
refrigerate until set.
Fills an 8- or 9-inch two layer
cake.

Walk Across Texas
Kick-Off
April 12 will be the Kick-Off to
promote the Lee County Walk
Across Texas Campaign and
complete the team sign-ups. On
April 12 the Lee County
Commissioners Court will sign a
resolution in support of the Walk
Across Texas Campaign. Team
members are welcome to attend the
court meeting at 10:00 a.m. to be
recognized. On April 19 we will
start keeping our individual and
team mileage to see if Lee County
walkers' total miles can walk across
Texas in eight weeks.
If you have not heard, the Walk
Across Texas Program is being
done throughout the state this
spring. It is a program to motivate
everyone to walk for eight weeks in
a friendly competition with persons
throughout the county. At the
Extension office, we will keep up
with the miles walked by each
team. As a group, we will see if
Lee County can walk across Texas
in eight weeks to promote regular
exercise and good health.
The hope of this program is that
if you walk for eight weeks, then
you will probably keep up the
walking program on your own.
Now is the time to contact my
office for more information on
Walk Across Texas along with
individual and team sign-up sheets.
Help organize a group and let’s
walk for better health.
