With the cost of meat climbing so high, meat packers are
endeavoring to get the public to do more with what they buy.
Winner of a favorite Texas picnic recipe contest is Mrs.
Olen S. Puckett of' Big Springs, whose recipe for picnic hamSamuels
won over thousands submitted to Sm hand Company, Dallas
meat packers.
Mrs. Puckett makes a sauce that includes a dash of tabasco,
two tablespoons of vinegar, and two tablespoons of Worcestershire
sauce, a half teaspoon of chili powder, and three-quarters
cup of catsup. The sauce is prepared while the ham undergoes
its pre-cooking after being moistened with bottled smoke
sauce, roasted fat side up at 325 degrees for 35 minutes for
each pound. Water is added to the pan if necessary.
The sauce again is mixed thoroughly before the roaster is
taken out of the oven.. The skin is removed, and the fat side
covered generously with the barbecue sauce. The cover is
replaced and the ham is baked for another 4+5 minutes, bastingoccasionally with the sauce.
