December TOPS meetings
Emory TOPS #1244 met each
Tuesday evening during the
month of December at 6:00 p.m.
at the F.moK Baptist ' Church.
The weather was bad at times,
but we all weighed in and were
proud of our weight losses.
The weekly devotionals were

her. They all received awards.
Denise Huffman lost the most
weight during December and
received an award for her efforts
She reported that she is doing
great and feels better.
Following the December 15
meeting, we enjoyed a Christmas
party with a great meal of low-lat
and eood-for-you food then held

JacksOn, a Kenny Rogers look-
alike. discussed several life-alter-
ing decisions, but understands
that without e\ery single one
good or bad he wouldn't .be
the man he is today or the author
of two books.
As a youth. Rabbit nev-
er thought he'd be a writer; he
fought he'd play professional
sports A gifted athlete in high
school, the young man thought
he could make a name for him '
self tn baseball While serving in
the Army and playing fast-pitch
softball. Rabbit received a letter
from Gene Autry, owner of the
California Angels at the time.
Autry wrote that when Rabbit
was discharged, the movie star/
Angels owner wanted "to take a
look at him " Unfortunately, that
day never came
After marrying and having
daughter Tony a Rave. Rabbit viv
idly remembers why and when
he first joined the Navy,
the Army because high giades
got him into the Army Securi-
ty Agency. About that time the
Vietnam Conflict jumped into
high gear and with conscription
(The Draft) in effect. Rabbit and
some of his buddies decided "to
join and to get it over with." pits

practically raised him. Rabbit's
grandmother, died He remem-
bered burying her. then leaving
for Ft Leonard Wood. Missouri,
on Halloween Rabbit explained,

It definitely did that as he
spent time in Vietnam's DMZ, a
supposedly demilitarized com-
bat free zone between enemies
North and South Vietnam, where
sortie of the bloodiest battles took
place. Rabbit assessed that war
by say ing the U S. w as essential-
ly there to help another country

through a conflict. "We tried to

reenlisting crossed his mind hut

Southern Pacific Railroad, and
driving trucks.
Then a cute girl working at
Piggly Wiggly in Houston caught
his eye. vet Barbara was 12 years
his junior. What was a guy to
do? Age shouldn't be the deter
miijing factor, a friend said, so
they 've been married since 1979,
with children Courtnev. Todd.

meanwhile. Rabbit had Ins first
"spell," of blurred vision to the
point of almost being blind. It
passed but then hit again, at
which time a nurse told him that
"she could sweeten coffee with
his finger "
It took until 2000 for the Vet-
erans Administration to issue a
letter stating that exposure iu*_-

tions Agent Orange was our mil
itary A code name for a herbicide
and defoliant used in Vietnam,
sprayed on dense jungles to pee
vent Communist forces from
hiding or raising crops. Millions,
including Rabbit, were exposed.
Other tragedies hit after mov-
ing outside Emory as son Kyle,
w ith a budding career as a col
lege pole-vaulter, was killed in
a car wxeck in 2006. That was
after son Todd was shot in the
chest during a freaky incident but
before Barbara underwent brain
surgery
the mill? You bet. But this cou-
rageous man .started putting
'words on paper, first by writjpg
about all aspects of war, then by
writing about people taking life
for granted while overlooking
what is really important. His two
books are Military Police Protec-
tion in Southeast Asia and Fam-
ily Love, Happiness to Heart-
ache. By the time you read this,
he will have had a book signing
at ALC'O in Emory.
Choices? Sure. Rabbit might
have played pro hall or waited
until the draft, possibly avoiding
exposure to Agent Orange. Per-
haps a career in the military or a
long-term job with the railroad.
Coulda, woulda, shoulda.
Rabbit takes ownership of his
choices but continues to move'
forward by writing, enjoying
children and grandchildren, help-
ing neighbors, loving his wife
but more importantly, living for
God. In closing he said, "After
all, I have a son (Kyle) who is
waiting on me, and I want to see
him.again"

8 sm. red-skinned potatoes,
quartered
1 3-lb. corned beef brisket
8 whole black peppercorns
2 bay leaves
1 onion, cut into wedges
1 head cabbage, cored and cut
into 8 wedges
In a 6-qt. crock pot, place potatoes
on the bottom. Tbp with corned beef,
including any juices in the pack-
age. Scatter on the onions, pepper-
corns and bay leaves. Add water to
covexXuok covered on low for 6 hrs.
then add cabbage wedges and con-
tinue cooking until meat is cooked
and vegetables are tender (about 2-3
hrs). Slice the meat and serve with
the vegetables, drizzling some of the
juioes over all Serves 6.

2 Tbs. olive oil
1/2* t. onion, chopped
T1"’- tbs. parsley, chopped
1/4 c. green pepper, chopped
1/4 c. tomato sauce
1/2 Tbs. Tabasco sauce
Salt
2 Tbs. all-purpose flour
1 c. milk
1 -16-oZrcan cream-style corn
Grated Parmesan cheese
In a large oven proof skillet, heat
oil on medium-high. Add onion, pars-
ley, bell pepper, Tabasco sauce and
tomat o sauce and cook, stirring occa-
sionally for 5 minutes. Add shrimp
and salt, Cover and reduce heat to
low and simmer for 2-3 minutes. Pre-
heat oven to 375 degrees. Sprinkle
flour over shrimp, stir, and add milk
gradually, stirring after each addi-
tion. Cook over medium* heat until
mixture thickens. Remove front heat
and pour corn over mixture with-
out stirring Sprinkle with Parmesan
cheese. Bake for 30 minutes or until
browned, Makes 4 servings.

which was the best seller in
2(X)9. The new book is called
More Favorite Traditional Quilts
Made Easy.
Parrott and her husband
moved to Van Zandt County in
1995. .She continues to teach
across East Texas and neighbor-
ing areas, such as Hunt, Rains,
Hopkins and Van Zandt counties.
Her goal is to make difficult pat-
terns easy. She loves teaching
beginners and seeing the finished
projects.
Parrot published three quilt-
ing books in the early 1990s."
With some new techniques for
old patterns, her fourth book was
releaspfl in October 2008. It was
the top seller in 2009 for her
